A few months ago, I participated in an olive campaign.  I received a ton of olives for this particular campaign.  They ranged from petit, to citrus, to Kalamata, to blue cheese stuffed.  Okay.  Now, I like olives, but OMGWOW!  Those blue cheese stuffed olives were INSANE!  Seriously.  I almost ate the whole jar in one week.  They were tender, creamy, salty, and sharp all in one bite.  The part I was really impressed with is the creamy.  I had no idea olives could be creamy, but these gems truly were.

Since I was so impressed by these olives, I knew I had to do something with them to highlight how delicious they truly are.  Of course, I’m assuming y’all like blue cheese.  Those that are not fans of the stinky cheese variety, please feel free to use your olive of choice and swap out the blue cheese in the dough with cheddar, Parmesan, or any other cheese you prefer.  This recipe is that easy to make.  But, since I was focused on the blue cheese stuffed olives, I used smooth, creamy, blue cheese in my dough.

Now, I have to warn you, these will make you want to lick your oven.  Please don’t.  It’s hot and you might burn your tongue beyond belief.  No, I’m not speaking from experience.

The aroma of baked cheese will flood your kitchen and make it smell amazing.  Because, it’s cheese.  And cheese is amazing.  Hello?

As soon as these came out of the oven I set a timer for when I thought they were cool enough to sample because I couldn’t wait to see how these tasted.  My.mouth.was.drooling!  Honestly.  The aroma, the blue cheese, the olives; they were a flavor packed finger food.  I sample a few that day, the next day, the following day; every day until I could photograph them.

The aroma of the baked cheese was just too intoxicating!!  If the bag was open, I had to close it because that deadly cheesy gas made me lose all control of my hands, made me reach into the bag for cheese coated olive, and devour it on the spot.  I kid you not.  These are HIGHLY addictive and should come with a warning label.

Now, for me they were addictive.  I have to share a snippet of my life as I was making these.  The hubs, I thought, was fond of blue cheese like I was.  I’m starting to think he might not be so in tune with the stinky cheese movement.  He took one bite of an olive without the baked cheese wrapper and shuddered.

How can that be?  I thought he was my SOUL MATE!?!?  I will admit, the olives are a bit brinier – is that even a word – than your standard olive, but it all complements the creamy blue cheese center.  At least that’s how I interpret it.  But, I shall refer you to the previous paragraph where I ask you to please use your favorite olive and cheese combination.

I really wish that photograph was more sharp.  I love the colors, the coating, and that you can see the cheese in the olive the best in this photo.  I’m drooling again.  Anyone have a napkin?  How have I not made these ever in my life before??  They’re like pimento cheese in a baked form.  Mmmmm pimento cheese.  You know, I tried to have a whole pimento cheese event but I don’t think it’s gonna fly.

Anyway.

These baked blue cheese olive bites are so simple and easy to make.  You probably have all the ingredients in your pantry with the exception of blue cheese, of course.  Unless you’re like me and keep blue cheese in the fridge.  And olives, unless you’re like me and keep olives in the fridge.  Honestly, who doesn’t have olives in the fridge??

So, I highly suggest you head to your kitchen, kick the oven on, and whip up some of these delicious baked blue cheese olives bites to nibble on at your leisure.  But, remember to close the container or zip top bag because that intoxicating cheese gas will make you do things you make regret later – like eat the whole bag.

Baked Blue Cheese Olive Bites

Total Time: 30 minutes

Blue cheese stuffed olives are wrapped in a simple yet delicious blue cheese dough and baked until golden brown. These Baked Blue Cheese Olive Bites are addictive!! Don't say I didn't warn you.

Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup melted butter
  • 6 ounces crumbled blue cheese
  • 1 teaspoon garlic salt
  • 1/4 teaspoon black pepper
  • 20 to 25 blue cheese stuffed olives

Instructions

  1. Preheat oven to 400.
  2. Combine the flour with the butter, blue cheese, and spices. Stir well to combine, using your hands if needed to mix the ingredients together.
  3. Place the olives on paper towels and dry them thoroughly.
  4. Roll a tablespoon of dough into a ball and carefully flatten it out in the palm of your hand. Place an olive in the center and carefully wrap the dough around the olive.
  5. Gently roll the dough coated olive in your hand until the seam is almost invisible. Place a baking sheet covered lined with a silpat or covered in aluminum foil coated with cooking spray. Repeat with remaining dough and olives.
  6. Bake at 400 to 25 to 30 minutes or until golden brown. Remove from heat and serve warm or at room temperature with your favorite dipping sauce.
