Did you know you can bake steel cut oats? I didn’t either until I made this savory Baked Oatmeal with Apple Cheddar & Sausage for #AppleWeek!

I love steel cut oats.  They have been a pantry staple for decades.  We’ve made them for breakfast growing up instead of your typical old-fashioned oats.  They simply have a better flavor, I think, than regular oatmeal.

Of course, this brand is all new to me.  Have you heard of Flahavan’s before?  I most certainly have not. It’s been that other brand that bears a family resemblance.  However, I’m thrilled to be working with any steel cut oatmeal for #AppleWeek.

Another thing you should follow is Flahavan’s!  Their oatmeal is delicious.  Truly delicious.  When I heard we were getting oatmeal, I knew I wanted to do something savory with it.  I wasn’t sure if I wanted to make an oat-sotto or something else along those lines to show that oatmeal isn’t just for sweet breakfast dishes, but could be for something savory for either breakfast or any other meal.

I know.  That’s not what you think when you think of oatmeal.  It’s typically the brown sugar and cinnamon, apple (hello… #AppleWeek!  Had to plug that one), or sometimes even peaches (is there a #PeachWeek?).  However, if y’all know me at all you know I’m not about the typical and traditional.  Have you seen my beet and goat cheese French macaron?  Just sayin…

So, one Saturday neither of us really felt like doing much of anything.  Consequently, I started wandering around Pinterest.  Well, you know how that goes.  Then I thought about an oatmeal casserole like a breakfast strata.  Finally, I stumbled on baked steel cut oatmeal and knew that was going in the oven.

Did you even know you could bake steel cut oatmeal like you can regular oatmeal?  Granted, it takes WAY more liquids but it’s so delicious.  If you haven’t tried yet you should.  It’s pretty simple, takes minutes to assemble, and then you go about your morning while it bakes.  In about an hour or so, it’s ready to serve!  How amazing is that?

You want to know the funny part of the story?  Really?  So…

So, the funny part of the story.  The hubs isn’t a fan of sweets for breakfast. We don’t have pancakes and waffles unless there of a savory variety.  And, not even then!  Those are usually for dinner.  Consequently, I thought this would be perfect for him!  It’s not sweet.  The dish is savory and it has lots of cheese in it.  Who doesn’t love cheese?

Then, I tasted it.  It’s perfect for me.  The oats are still al dente just the way I like them.  Not to worry, I extended the cooking time and amount of liquids for a more traditional, tender oatmeal.  They’re perfectly nutty, the cheese is salty, and the sausage is flavorful.  Finally, he turns to me and says… I kid you not… “It needs sugar.”

WHAAAAT????????  Sugar??  “It’s a savory oatmeal.”  “Oh.”  Seriously?

Sometimes you just have to laugh.  At him.  Because he’s always throwing me for a loop.  So, I guess he’ll eat sweets for breakfast if it’s oatmeal.  That has to be sweet for him.  I, on the other hand, thought it was perfectly delicious and would eat it again.  And I hope you do, too!

Apple Cheddar and Sausage #AppleWeek

Baked Oatmeal with Apple Cheddar and Sausage

Cook Time: 1 hour 10 minutes
Additional Time: 10 minutes
Total Time: 1 hour 20 minutes

Ingredients

  • 1 tablespoon butter
  • 1/2 cup onion
  • 1 1/2 cups steel cut oatmeal
  • 2 cups milk
  • 3 1/2 cups boiling water
  • 1 cup chopped apples
  • 1 cup chopped sausage
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoons salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat oven to 375.
  2. Heat a skillet over medium-high heat. Melt the butter in the pan before adding the onions. Saute the onions until slightly soft; about 3 to 5 minutes. Stir in the oatmeal and cook for 2 to 3 minutes.
  3. Remove from heat and stir in the apples, sauce, 1 cup cheddar cheese, salt, and black pepper.
  4. Pour the milk and boiling water in a 9 x 13 casserole dish. Stir in the oatmeal mixture, cover, and bake at 375 for 60 minutes.
  5. Remove the cover, sprinkle the remaining cheese on top. Bake an additional 5 to 10 minutes or until the cheese is melted.
  6. Allow to cool 10 minutes before serving.

  1. Oh wow is this ever good!!!! I am diabetic and looked for a savory baked oatmeal , I am so glad I tried this one today!!! It is a real keeper! It is very adaptable I think, I had only Mexican blend cheese in the fridge. Also, I make my own breakfast sausage meat and freeze it in 1 lb packages, I used that. My hubby is a picky eater and thought this was crazy to make…. he said this is a def keeper!!!! I thank you so much for sharing this doll <3

  3. These remind me of the sausage cheeseballs I love! I never thought to had cheddar with apples until I had it in a pie in Tennessee. I thought they were crazy until I tasted that pie! This reminds me of that but so much easier!

    1. That’s funny! I never thought of sausage balls. I might have to make those now. I still think Dad is crazy with his cheddar and apple pie. I haven’t taken the plunge for that.

  5. Now you have me thinking! I love baked oatmeal but have never done a savory version. I already have another sweet version on my must make list, but this will have to fall in line after that. (Ps. that dish is beautiful!)
