Banana Burritos
Sometimes we order Mexican food for delivery on the weekends. Friday was one of those such instances. We’ve had issues with this place in the past. The first time we ordered, it was fine. The second time? I took 1 1/2 hours to get our food and that was AFTER calling an hour after we placed the order. The second time, same thing. Third time, no issues because we had free meal coupons. We waited MONTHS before ordering again, but lately, they seemed to have stepped up. The last two times we ordered there weren’t any issues.
Anyway, they have apple flautas on the menu. Sometimes I’m in the mood for them, so I order one or two for us. I noticed this time they had cinnamon crisps. Flour tortillas fried and then coated in powdered sugar and cinnamon. nomnomnom
I always think of making the flautas for us. I mean, how hard can it be? Canned apple pie filling, or even just some fried apples, flour tortillas, bake and voila! Since we’re doing the low fat thing, I had some difficulties finding low fat tortillas. Well, I found them. In the bread aisle of all places!! No, not the bakery in the front of the store, but where the sandwich bread is? I never thought of looking there. Once I found it, I decided to make something else.
Cause that’s just how I roll.
Speaking of rolling…
Preheat oven to 350. Heat a non-stick skillet over medium high heat. Add butter and swirl until melted. Stir in the brown sugar and cook, stirring constantly, until the sugar has dissolved.
Add bananas and cinnamon. Simmer until bananas are soft; approximately 5 minutes.
Spread 2 tablespoons of dulche down the center of one tortilla.
Place 1/8 cup of banana mixture top.
Fold in sides and roll up in burrito fashion.
Place seam side down on a baking sheet topped with aluminum foil coated with cooking spray. Repeat with remaining tortillas, dulce, and banana mixture.
Spray each burrito with cooking spray and bake at 350 for 20 minutes. Flip burritos over and bake an additional 20 minutes. They should be gold brown on top.
Yeah, I failed at rolling them tight enough. Mine oozed some dulce. BUT it’s all good. There was still plenty left and they were mighty tasty!
Banana Burritos
Inspired by apple flautas, these Banana Burritos are delicious and easy to whip up for your family. Top with caramel sauce, whipped cream, or simply sprinkle with powdered sugar and cinnamon.
Ingredients
- 1/3 cup brown sugar, packed
- 1 1/2 tablespoons butter or margarine
- 2 large bananas, chopped
- 1/2 teaspoon ground cinnamon
- 1/2 cup dulche de leche
- 4 whole tortillas, fajita size
Instructions

Yum, I love bananas and anything cooked with them. I hear ya about finding low fat tortillas. It seems like no sooner do I find a brand that I like and start using them, then the store stops carrying them! Ack! Hope that doesn't happen for you though!
