Now, I have a confession to make.  I have never made a bubble up anything.  Seriously.  I know they’ve been around for almost a decade or more and I honestly SHOULD have made something like this, but I haven’t.  Until now.

I see the bubble up recipes spanning across breakfast, lunch, dinner, and dessert.  I see them all the time on Plain Chicken.  They look so deliciously good!  But, for whatever reason, I’ve never actually made one.  That is, until now.  And can I just say, I have no idea what took me so long, but I will definitely be making more of these in the future!!

If you have never made anything bubble up ever, you really should.  They’re super easy, delicious, and not expensive at all to make.  This Bubble Up Denver Breakfast Bake was made with some cheese, a can of biscuits, some veggies and some eggs.  The most expensive item being the biscuits, I think.  Or maybe it would be the cheese.  Either way, you’re look at less than $10 for a meal for 6.  And a delicious meal at that!!

When I want a more than one serving, I know that it’s a good meal.  Honestly, when the hubs has more than one serving, then it’s definitely a good meal!!  I wanted just a bite more of the delicious biscuit topping; just one more bite of the ham, egg, and cheese goodness that is this bubble up recipe.  It’s just that good.

I know that part of the amazing flavor of this Bubble Up Denver Breakfast Bake is due to the creamy, delicious flavor of the Cabot cheese.  I have LOVED Cabot cheese since my sister lived in Vermont.  We used to buy 5 pound blocks of it there, bring it home, and freezer it to savor it until we trekked up to VT to visit her again.  She doesn’t live there anymore, so I have to be content with what flavors I can get at my local grocery store.

Cabot was kind enough to send is a TON of cheese!  Almost 5 or 6 pounds, I think?  There was a delicious sun-dried tomato basil that because part of delicious Tuscan, slow cooker dip sandwiches.  You’re just going to have to wait on that recipe.  It’s so good, I just eat it before I can photograph it.  There was THE BEST extra sharp cheddar, that you will see later.  Then there’s the chipotle cheddar that was part of tonight’s taco chicken dinner.  I received so many different flavors and levels of sharpness and age in the package I received.  I was in heaven!!

How could I not be?  I mean, hello?  Cheese??

And just look at that hearty Bubble Up Denver Breakfast Bake goodness on my plate, there.  The cheese tastes amazing with the slightly sweet ham and scrumptious eggs.  Then there’s the tender biscuits that float to the top while it bakes.  Mmmm.  I’m getting hungry and we just ate dinner!!

That’s the best part about this recipe!  It’s so easy.  The longest task was grating the cheese!  By hand, of course.  It comes together in no time flat.  While it’s baking you can kick your feet up and read my blog.  Or, do some dishes, if you’re like me.  And maybe mop the floor.  Because the drop dribbles water on the hardwood floor.  And leaves little, dried water drops on it.  Because she can’t reach the paper towels to clean up after herself.

Bubble Up Denver Breakfast Bake #BrunchWeek

Cook Time: 1 hour 5 minutes
Total Time: 1 hour 5 minutes

Quick and easy, this Bubble Up Denver Breakfast assembles in minutes for a hearty and delicious brunch recipe.

Ingredients

  • 1 1/2 cups egg substitute
  • 1 teaspoon garlic salt
  • 1/2 teaspoon dried thyme
  • dash cayenne pepper
  • 10 ounces reduced fat refrigerator biscuits
  • 1 cup diced ham
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cups cheddar cheese, divided
  • 1/4 cup fat free half and half

Instructions

  1. Combine the eggs with the garlic salt, thyme, and cayenne pepper. Stir well to combine and set aside.
  2. Cut the biscuits in half and then cut each half into three pieces. Layer the biscuits in the bottom of a casserole dish.
  3. Top the biscuits with the ham, peppers, onions, and half of the cheese.
  4. Pour the egg mixture over the biscuit mixture and bake at 350 for 40 to 50 minutes or until bubbly and the eggs are set. The biscuits should rise to the top of the casserole dish.
  5. Top with remaining cheese and cook an additional 10 to 15 minutes or until the cheese is melted and bubbly. Allow to cool slightly before serving.
