Are y’all ready for Thanksgiving next week?  I don’t know that I am.  At least this year, the hubs will be home with me and not at the hotel working.  I am totally looking forward to having him home for the holidays.  It makes me truly happy.  I especially missed him immensely on those holidays.

For those that are new to my blog, or those that just don’t remember, the only family we have close is my father and step-mother.  Since they usually go to Williamsburg to Thanksgiving every year we don’t see them.  That leaves me, the hubs, and the dog for the Thanksgiving holiday.

Everyone else we know usually have plans or have family to go to for the holidays.  Which leaves just the two of us to cook and eat dinner.  Not that I’m complaining!  I’m just setting a picture for you.

Have you gone shopping for a turkey recently?

The smallest turkey I can find every year is about 14 pounds.  That’s roughly 5 to 6 pounds of turkey for each of us to eat.  Talk about tryptophan overdose!  This leaves us with a ton of leftovers.

For whatever reason, leftover turkey leads me to hot browns.  I think I’ve made a version of hot browns with my leftover turkey every year since I started participating in Sunday Supper.  It was the traditional meal we would make with our leftover turkey either for breakfast or lunch the following Friday.

Let’s see, there’s just your straight up traditional hot brownshot brown pasta bake, and hot brown ham sliders.  I also made some turkey and stuffing enchiladas, but that’s not a hot brown.  OH!  Hot brown enchiladas!  I can’t wait to make those next year.  Now THAT would be good!!

Hot browns are just an open-faced turkey club that’s topped with tomatoes and cheese sauce.  Simple as that.  However, the flavors are so comforting to me that it’s typically the meal I want to make with my leftover turkey.

That and a straight up turkey sandwich with mayonnaise.

Just mayonnaise and maybe a slice of tomato on lightly toasted bread.  To me, that’s the quintessential leftover turkey sandwich.  Is it Thanksgiving yet?

What is always leftover that usually doesn’t get eaten is the cranberry sauce.  Except, one year, I took that cranberry sauce and turned them into some cranberry bellinis that were delicious!  I could drink them every year.  That little bit of sweet tart dancing with the bubbly.  You absolutely should try them.

You’re wondering how I made it from hot browns to a bubble up version.  It’s super simple.  I loved the bubble up recipe I made for an event earlier this year.  It was delicious and so simple to make!  I thought it would be the perfect platform to turn left over turkey into a hot brown bubble up bake.  You could serve it at any meal after the holidays!  Breakfast, lunch, brunch, dinner; you could eat a bubble up in all honesty any time of day.

Due to the simplicity and the budget friendly nature of this bubble up recipe, you could make it all the time.  Not just because it’s simple and frugal, but because it tastes delicious!  There’s the biscuits mingling with the turkey and bacon all swimming in the cheese sauce and topped with more cheese.  What’s not to love?

Bubble Up Hot Brown Casserole

Prep Time: 10 minutes
Cook Time: 45 minutes
Additional Time: 10 minutes
Total Time: 1 hour 5 minutes

Ingredients

  • 16 ounces canned, buttermilk biscuit dough
  • 8 ounces sliced turkey
  • 6 slices center cut bacon
  • 2 cups cheddar cheese, divided
  • 1/2 cup cheddar cheese soup
  • 1/2 cup milk
  • 1 cup diced tomatoes

Instructions

  1. Preheat oven to 400.
  2. Separate the biscuits apart and cut into 6 pieces. Place in the bottom of a 9 x 13 casserole dish coated with cooking spray.
  3. Coarsely chop the turkey and sprinkle over the biscuits.
  4. Place paper towels on a microwave safe plate. Place the bacon on the plate and top with additional paper towels. Microwave the bacon for 4 minutes then in two minute intervals until the bacon is crispy. Allow to cool slightly before chopping and sprinkling over the turkey.
  5. Sprinkle one cup of cheddar cheese over the bacon.
  6. Combine the cheddar cheese soup with the milk with a whisk. Pour the mixture over the cheese. Cover the casserole and bake at 400 for 45 to 50 minutes or until the biscuits are cooked through.
  7. Remove the cover and sprinkle the remaining cheese and diced tomatoes on top and bake for an additional 10 to 15 minutes or until the cheese is melted. Cook slightly before serving.

  1. I’d never heard of hot browns so glad you explained! I expect we’re going to have a ton of turkey leftover too, as it’s just us and the kids who are still little, but we’ll certainly do our best I’m sure! This looks so comforting.

  4. Sounds delicious! I lived in KY for 5 years where hot browns were popular. Need to try this. BTW, when making turkey at home I run into the same thing cooking for 3 of us, I sometimes like to get the breast which you can get a bit smaller.

    1. Thank you! I was born in KY, which is why so many hot brown recipes. They’re like home to me. And I thought about a breast, but the amount I’d pay for a breast I can get a whole turkey. I just freeze the left overs for later.
