Yes.  It’s Pi day, and I have no pie.  *shrugs*  Keep reading and you’ll see why.

Ugh.  Sometimes I am REALLY NOT in the mood for weeknight cooking.  I don’t know about y’all, but that’s especially true when I’m sick.  Yup.  I’m sick.  Caught some crud from someone somewhere.  I just hope *crosses fingers* that S doesn’t really get it.  It’s not pleasant.

Bear with me.  I’ll get to this tasty recipe in a bit…

Monday, I could feel that familiar sensation in the back of my throat.  It only escalated from there.  Tuesday?  Full on attack.  Here’s the timeline.

3:55 – Missy wakes me up to take her out.  That’s a full 25 minutes before the alarm goes off.  Yeah.
4:15 – Sitting on the couch after the walk and am just freezing cold.  FREEZING.  Debate ensues.  Go to work for meeting, stay home, go in JUST for the meeting then beg Dad to pick me up at Metro and take me home.
5:00 – Crawl back into bed with sweats, fleece, and fuzzy socks and am still cold.
5:05 – Dumb ass, you’re sick.  STAY HOME FOR ONCE!
5:15 – Asleep in bed again and have accepted defeat.  Yes, I will stay home and rest.

The rest was pretty mundane.  Hot bath to warm up, sleep, cereal, sleep, sammy, sleep, ordering dinner, sleep.  You get the picture.  I haven’t slept that much in years.  I must have seriously needed it.

And., yes.  I seriously did have that debate.  The meeting was something that has been threatened for years but never actually accomplished.  And of course…the OTHER person made it happen.  I swear.  I should have been more pushy.

Needless to say, the thought of coming home and cooking the rest of the week, really wasn’t on my top ten of things to do.  Surviving and being able to breathe?  Top ten fo sho!But this dish?  Whips up in a flash!  It’s truly, home made hamburger helper that is so much tastier and less salty than the other stuff.  I am so sensitive to salt, but I’m sure I’ve gone on about that before.  Going out?  Feels like I’ve been chompin on a salt lick.  Ew.

I seriously don’t know how some peeps in this office can eat out for lunch every day of the week.  It just blows my mind.  Unless they’re REALLY crappy cooks at home, but seriously…every day.

This comes up because Monday was take your lunch to work day.  Well, as a department we tried to celebrate it on Thursday.  It was me and 3 others.  Out of the WHOLE department.  How sad is that?  The coordinator spoke to several before coming over and they had 8 billion excuses as to why they couldn’t make it to just eat lunch with others.  I said, “8 billion excuses to eat out and eat unhealthy.”  I’m busy.  I don’t have time.  I’m just going to grab a quick bite before my next meeting.  I forgot.  Pile ’em on.  Excuses.

I have none.  I love my dinner so much, I want to eat it for lunch the next day.  99% of the time at least.  Some lunches are a bit crapty, but I still eat them.  The only time I will eat out is if there literally is NOTHING left in the fridge to eat for lunch.  And trust me when I tell you NOTHING!  I have come up with some of the most interesting and probably not all that appealing lunches to eat so I don’t have to go out.

When you’re lunch looks like this, do you want to go out? This is cheesy, tomato-y, beef-y goodness with a side broccoli is a delicious Cheesy Skillet Beef dinner. Perfect for weeknights and lunch left overs!

Ingredients

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 10.75 ounces canned tomato soup
  • 4 ounces Velveeta cheese
  • 2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 cups elbow macaroni

Instructions

  1. Heat a large skillet coated with cooking spray over medium-high heat. Add onions and ground beef and cook until the beef is browned.
  2. Stir in the tomato soup and Velveeta cheese until combined. Add water and macaroni. Bring to a boil then cover and simmer 20 to 22 minutes or until the pasta is cooked and water is absorbed.
  3. Divide evenly among 4 plates and serve with fresh, steamed vegetables and hearty bread.
