Happy Father’s Day!  I can’t believe it’s the middle of June already.  Where has the year gone??  Oh!  That’s right!  I’ve spent most of it in meetings at work!

So, when we were growing up, we didn’t realize what it meant to be an adult.  I mean, what kid really does.  My sister and I would want to spend time with Dad.  We’d want to play with him, talk to him; you know how it goes!  Except, he was always tired on the weeknights.  We just didn’t get it.

Well, I get it.  I’m not quite to the status that he was.  I don’t nap when I get home and then stay up all hours of the night working on the computer.  That’s the part that my sister and I didn’t know about.  He would be up until all hours of the night working then get up early to go into work and start the day over again.  He didn’t tell us that.

It wasn’t until I started really getting involved at work and excelling at it that he let me in on that little secret.  Because I get home and night and I’m just beat.  Exhausted!  And some nights I am so tired I take a little nap.  But that’s usually after the REALLY tiresome and killer days.

Dad didn’t tell us because he just wanted us to be happy and not worry about him.  He wanted to make sure us girls were provided for!  Dad make sure we had everything we needed and some things we wanted.  And working those long hours and late nights meant he was doing just that.

My dad was good at his job.  He knew how to get reliable people to do what needed to be done.  I have a little of that in me.  People say I’m a natural teacher.  Others say I’m the go to person because I have learned or experienced it all.  The good and the bad!!

I say I have lots to learn to be as good as Dad was at his job.  I get frustrated or stressed and I just snark.  That’s not so good.  I don’t want to, but sometimes, MAN people just test my patience.  Today was one of those days.  I don’t have the finesse that he had.  Of course, it’s a different type of government than when Dad started out.  I have to be careful what I say and do sometimes.

These are all skills Dad tried to instill in us.  And being a fellow Federal employee, he has a lot more to teach me about working in that political environment.  Heck, he has a lot to teach me about being a manager or supervisor.  I CAN be good at it, but I must learn to be more understanding and less frustrated.

It wasn’t all work!!  We had fun, too!!  On the weekends, we would plan our route and go yard saleing!  Yes.  It was a verb in our house!  My parents started an antique glassware business and when I was home for summers from college Dad and I would hit the road and some yard sales.  Some of them were drive by’s.  You know what mean?  Those with clothes or just hardly anything at them.  Others were jackpots!  If we weren’t hitting a yard sale or 20 we would head out to a flea market.

Occasionally, we would pack a picnic lunch, the fishing gear, and head out to our favorite spot just south of here.  We’d get a boat with a trolling motor, find a nice spot on a point, and just drop some lines in the water.

Dad taught me everything I know about fishing.  He taught me how to tie a knot for a swivel, how to set a line on the bottom for catfish, and how to hook a minnow to a float for bass and sunfish.  We had some great times in those little boats!  We’d listen to tunes, chat, just pass the day away relaxing and occasionally catching some dinner.

When we didn’t catch dinner, we’d grill up some burgers.  Not these burgers, but some burgers and a hot dog or two.  We didn’t play much with the burgers when we were growing up.  But we did make a lot of fajitas so I know Dad would totally love these burgers!  They’re packed with fajita seasoning and moist, delicious vegetables like peppers and onions.  Top these burgers with some creamy cheddar and tasty guacamole and you’re the hit of Father’s Day!

Chicken Fajita Burgers

Packed with fajita seasoning and tasty vegetables, these Chicken Fajita Burgers are not only tasty, but healthy, too! Just the thing to keep Dad around for a long time!! #SundaySupper

Ingredients

  • 16 ounces ground chicken
  • 1 tablespoon fajita seasoning
  • 1/3 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 1/2 cup shredded habanero cheddar cheese
  • 4 hamburger buns
  • 4 slices tomato
  • 4 slices red onion
  • 4 slices Colby jack cheese

Instructions

  1. Preheat grill to high.
  2. Combine the ground chicken, fajita seasoning, red onion, red bell pepper, and habanero cheddar cheese in a mixing bowl. Divide into four equal portions and shape into patties.
  3. Grill 5 to 7 minutes on each side or until the internal temperature reaches 165. Remove from the grill and top each patty with one slices of Colby jack cheese and allow to rest.
  4. Prepare your bun with the tomato, onion, and other toppings of your choice. Top with a chicken burger and serve with fries, beans, or pico de gallo!

  1. What a wonderful dad! Mine took us out on “adventures!” It was partially to get us out of my mom’s hair, but they were always fun. P.S. These burgers look amazing!
