It’s getting colder, which means I’m craving more and more comfort foods, like macaroni and cheese. But I’m not talking blue box mac n cheese. I want something more in my pasta with cheese sauce.

Don’t get me wrong! I’m not dissing the blue box. It has its charm. No, I didn’t grow up eating it. Macaroni and cheese didn’t usually come out of a box for us until Velveeta made their shells and cheese dinner and even then we didn’t have it often. I think I ate more macaroni and cheese in either box through college, but I think I’ve had more blue box macaroni and cheese since I’ve been with S.

I was going somewhere with this train of thought; cold weather, macaroni and cheese, comfort food! Yes! Macaroni and cheese is a comfort food for probably 99% of the population. I could be wrong on that statistic. But lately, for me, I want a stepped up macaroni and cheese. I want different cheese, vegetables, and meat in there. Flavors like mustard and garlic and maybe some basil should in there. I want grown up macaroni and cheese!

So, that’s what I’m making; grown up macaroni and cheese! And that’s just what this is! Deliciously creamy, tasty, grown up mac n cheese. It has smoked turkey sausage, trinity (peppers, onions, and celery), spicy Cajun seasoning, and a fabulously creamy sauce. I’m not seeing this one at the kids table. With all those veggies in there, I can’t imagine many kids will want to eat this dish.

Well, I probably would have. Mom made sure were not picky eaters. We had to try it at least once before we turned our nose up at it. Cajun seasoning included! Dad had several trips to New Orleans and we had a recipe for blackened seasoning before it even existed in bottle form at the grocery. Yup, I still have that recipe, but I haven’t made it in years.

Yet another reason why this dish is more like comfort food to me. Cajun seasoning has been in our kitchen for decades! We blackened everything and put that s…. seasoning on more than just meat for flavorings. It went with pasta, rice, and vegetables. We made dirty rice, beignets, muffelatas; if it came from New Orleans we were trying to make it. Come to think of it, we were that way with lots of food! There were many take out at home dinners including the best egg rolls ever!

Hmm….that reminds me of another post I want to write.

So, you can see how I have come to love food and create food. It’s always been part of our family routine. And with food that looks like this, how can you resist? The creamy spiciness of the sauce is scrumptious. The smoky flavor of the sausage is enhanced by the Cajun seasoning and the trinity just brings it all together. Tomatoes just send the sauce over the top! You will not be disappointed with this recipe.

Not to mention the fact that it comes together quickly! Set the pot of water on to boil first. That’s what takes the longest. Do this, and it can easily be on the table in about 30 minutes. How about that? Comfort food that doesn’t take all day to cook up. Not that all comfort food does, but, this comfort food is definitely weekday worthy!

Creamy Cajun Pasta with Sausage

Creamy Cajun Pasta with Sausage

Cook Time: 25 minutes
Total Time: 25 minutes

Simple turkey sausage is glammed up with this delicious and simple cream sauce. This Creamy Cajun Pasta with Sausage is perfect for any night of the week!

Ingredients

  • 1 cup thinly sliced onion
  • 1 tablespoons minced garlic
  • 1/2 cup chopped, green, bell peppers
  • 1/2 cup chopped celery
  • 13 ounces smoked turkey sausage, sliced
  • 1 tablespoon Cajun seasoning
  • 14 ounces canned tomatoes
  • 1 cup fat free half and half
  • 2 ounces fat free cream cheese
  • 8 ounces uncooked pasta

Instructions

  1. Cook pasta according to package directions, omitting salt and fat.
  2. Heat a skillet coated with cooking spray over medium-high heat. Add onions and garlic and saute one minute. Add the peppers and cook until the vegetables soften, about 3 to 5 minutes.
  3. Add the sausage and Cajun seasoning. Saute until browned.
  4. Add the tomatoes and simmer until the juices have reduced by half. Pour the half and half over the mixture and bring to a simmer. Using a whisk, melt the cream cheese into the cream and simmer until heated through.
  5. Add the cooked pasta and toss well to coat. Serve with some crusty bread.
