Is it just me, or has 2016 snuck up on you?  Honestly.  It was July and then I blinked.  Where does the time go?  It seems like yesterday we were sitting at Niagara for our first anniversary.  *blink* Wait!  I think a day just went by.
 
Now, show of hands.  Who has vowed to eat healthier this year?  *raises hand*
 
What is it about the New Year that makes us reinvent ourselves?  New Year New You?  How come we don’t vow to eat healthier at like, the Fourth of July?  Birthday?  Columbus Day?  I’m on that bandwagon, too.  Healthier eating, exercise, drinking water; it all adds up to a healthy lifestyle and healthier me.

Being healthy does not necessarily mean we have to look like a model.  I think that’s something that, as a woman, gets ingrained in our brain; we must look like a Victoria’s Secret model.  I wish someone would do a fashion magazine that has real women as models; not some New York agency roster of models.  THAT would be a magazine that I honestly would subscribe to.  As it stands, I get two in the mail; a vegetarian one and a knitting one.  Yup.  Just two.
 
 
No.  We’re not vegetarian. 
 
I subscribe to give me ideas on our meals; both meat free and meat filled.  Seriously You turn the page and there’s this gorgeous looking Asian noodle stir fry and you think, “Man, that could use some thin slices of delicious beef!”  Voila!  Idea is born.  There’s tarts and savory pies a plenty. You could easily toss in some lean beef or some slices of tenderloin steak.  Oh man.  I’m drooling, aren’t you?

However, this dish was not inspired by that magazine.  This dish is a delicious attempt at a fake out food.  We order Chinese food often.  One of the many dishes we enjoy is curry beef.  It’s oh so good with the vegetables, the hearty beef, the curry flavor.  Yum!  Yet, we all know that ordering in is not the best, most healthy options to choose from.
 
What’s a food blogger to do?
 
Recreate this dish at home and HEALTHIER!  First, by lowering the amount of salt and fat in the recipe I can make it more flavorful and better for my family.  Then I amp up the curry flavor using my own blend and kick it up with some heat and some chiles.  And, finally, the piece de la resistance!  Lean eye of round steak!

Eye of round is super lean and SO flavorful!  It comes in steak and roast form.  Three ounces of eye of round only has 4 grams of fat per serving.  FOUR GRAMS!  Because of this, you can’t tell me that all beef is fatty and that all beef has to have fat to be flavorful.  With a delicious roast like eye of round, you can make a mean pot roast, delicious slow cooker stew, or marinate eye or round steaks and grill them. 

Either way you slice it, beef doesn’t have to be fatty to be delicious.

For example, this Asian Style Curry Beef Stir-Fry!  Just look at how colorful that is!  All those vegetables and all that curry flavor; you just know this dish will blow your taste buds away.  You WILL NOT wish you had ordered in.  Save the paper containers, the little packets of sauces, and those splintered chop sticks!  Make this fake out recipe for your family when they’re craving some Asian take-out.  Serve this bad boy up with some hearty brown rice and you’ve got a HEALTHY fake out meal at home.

And I Iove this recipe.  This tastes AH-mazing!  It’s oh so flavorful!  Because of this, never again will I order that *coughOTHERcough* curry recipe from the take out again.  Now, I just need to work on some healthier egg rolls, recreate the pu pu platter, and I’m golden!  Anyone have a healthy crab rangoon recipe?

Flavorful Asian Style Beef Curry Stir-Fry

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

This fake-out take-out version of my favorite dish, Asian Style Curry Beef, is made with lean beef, lots of vegetables, and a low fat curry flavored sauce.

Ingredients

  • 1 pound round steak
  • 2 tablespoons tamari soy sauce
  • 3 tablespoon curry powder, divided
  • 3 tablespoon cornstarch, divided
  • 2 cups fat free chicken broth
  • 1 teaspoon garam masala
  • 1 tablespoon garlic
  • 1 tablespoon ginger
  • 1 cup thinly sliced onion
  • 1 cup sliced celery
  • 1/2 cup julienned carrot
  • 1 cup thinly sliced bell pepper
  • 6 cups brown rice

Instructions

  1. Thinly slice the round steak and place in a mixing bowl with the soy sauce, 1 tablespoon of cornstarch, and 1 tablespoon curry powder. Allow the beef to marinate while you prep the rest of the ingredients.
  2. Combine the broth with the rest of the cornstarch and curry powder. Stir in the garam masala and set aside.
  3. Heat a large skillet coated with cooking spray over high heat. Sauté the garlic and ginger 30 seconds before adding the onions, celery, and carrots. Cook the vegetables 2 to 3 minutes before adding the bell peppers. Continue to cook until the vegetables are crisp tender. Remove to a large bowl and set aside.
  4. Spray the skillet with additional cooking spray as needed before adding the beef. Cook the beef, stirring constantly, until browned.
  5. Return the vegetables to the pan. Pour the broth mixture over the beef mixture and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until the mixture thickens.
  6. Divide the rice evenly between four plates and top with 1 ½ cups of beef mixture.

  1. This looks so yummy! And you gotta love that it’s healthier than take out, yummier too I bet!
    I also said I would be healthier this year, I was doing during the latter half of 2015 too but then Christmas happened and it all went out the window – back on the health wagon now though!

  2. I have been really digging Chinese and Thai food recently so this looks fabulous to me. I have a hard time figuring out what meats to buy for stir fries so I’m glad you had all that info about lean meats.
