So, this is round 5 for me with the #FreakyFriday group. “What’s #FreakyFriday” you ask? Well, it’s hosted by Michaela from An Affair of the Heart. There are 19 bloggers participating in the event this month.

Here’s the 411.  Each blogger who signs up is assigned a blog from another participant. Like me, for instance. I was assigned Bowl me Over. Once you receive your assigned blog, you get to go through their recipes and pick something you want to cook.  I have been obsessed with popsicles lately, so I knew I would make Deb’s Homemade Strawberry Frozen Yogurt!  Then, once you cook up your selected recipe, you post about on the #FreakyFriday; telling everyone about their wonderful blog, what you found out, and how delicious their recipe was!

Surprisingly, I haven’t cooked from Bowl Me Over!  I can’t believe that I haven’t, but I haven’t.    I was surprised that I haven’t.  But I did an extensive search and don’t see one from her site.

If you don’t know Debra, she’s a sweetheart and has an amazing blog.  Her blog is based on bowl meals.  LOVE those.  My husband and I live off bowl meals.  That means we get to sit on the couch and watch television while we eat dinner.  He gets so excited when it’s a bowl meal.  It’s too cute.

Debra and I used to participate in #FoodieFriDIY.  That was a fun roundup that started out as a pinning party, but morphed into something else.  Those were some fun times!  But, with all things, they must morph into something else or just stop entirely.

Debra has been branching out and doing live Facebook posts.  I envy that.  I need to start doing that, but really don’t have the resources.  However, now that my husband must do video for his job, it’s probably in the near future for both of us.

For this round of #FreakyFridayRecipes, we were all aiming for a summer dessert recipe.  Granted, not all of us are in summer.  There’s one blogger that participates that’s on the other side of the globe from the rest of us and she’s in winter.  She was going to look for a comparable recipe she could make for her time of the year.

Debra has shared one popsicle recipe on her blog.  They look fabulous and are going on the menu soon.  I mean, who doesn’t like Dulce the Leche Mocha Popsicles?  I know I can’t wait to try them along with the Homemade Vanilla Ice Cream Float.  Because I haven’t had a float in FOREVER!  And with the new spiked root beer, you could easily make this an adult dessert.

I was also eyeing her No Bake Peanut Butter Chocolate Chip Cheesecake.  I don’t know about you, but I’m not a huge fan of being the hot kitchen during summer.  It just seems hotter because it’s summer.  Or is it just me?  She also has a delicious Dreamy Strawberry Pie.  When I stumbled on that along with the recipe I made, I knew strawberries were in my future.

Who can resist those succulent red berries.  They’re sweet.  They’re tart.  Strawberries have amazing flavor.  They’re packed with lots of nutrients.  Now pair them with rich and delicious yogurt that’s full of protein and you have a delicious dessert that’s good for you.  Yup.  I said it.

You know that it’s going to be packed with berry goodness.  It’s going to be sweet.  And it’s going to be creamy.  You can tell from looking at it it’s going to be creamy and delicious.

Now, I have this obsession with popsicles.  But the popsicles I’ve made in the past have been hard as a rock the next day.  I’ve been trying to figure out how to counteract this.  The last round I made with milk I included some pudding in the mix.  This seemed to work.

In order to keep this recipe from completely freezing to rock hard, I thought I’d add some gelatin to the mix.  This meant I added just a little bit of strawberry flavored gelatin to the mix.  I’m just about convinced that gelatin is the key to keeping ice cream and popsicles from freezing rock hard the next day.

This is my first experiment with putting flavored gelatin in a recipe.  And it worked!  These popsicles are easy to get out of the molds.  They are easy to bite into even days after making them.  And they have even more delicious strawberry flavor from the gelatin.

That’s the only adjustment I made to Debra’s recipe, Homemade Strawberry Frozen Yogurt.  These are packed with amazingly fresh strawberry flavor.  They’re simple to whip up.  You can make them in the blender.  The BLENDER!  It takes minutes to prepare this mix to freeze in popsicle molds or in your ice cream maker.

Homemade Strawberry Frozen Yogurt Popsicles

Cook Time: 5 minutes
Additional Time: 4 hours
Total Time: 4 hours 5 minutes

Fresh, in season strawberries, creamy yogurt, and sweet honey combine to make these summery Homemade Strawberry Frozen Yogurt Popsicles.

Ingredients

  • 4 cups sliced strawberries
  • 1 1/2 cup plain yogurt
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 cup honey
  • 3 tablespoons strawberry flavored gelatin

Instructions

  1. Combine all ingredients in a blender and pulse until combined. Be careful not to over process the berries.
  2. Pour into your ice cream maker and freezer according to manufacturer's directions or pour into popsicle molds and freeze at least 4 hours before serving.

    1. Thank you! I just didn’t want to break a tooth the next day as I’ve experienced in the past. It does make them a little softer to eat even a week later.
