Kielbasa-Bean Slow Cooker Soup
This was surprisingly good for WW recipe. I would use turkey kielbasa and double the amount of meat, though.
4 14.5oz cans fat-free chicken broth
16 ounces reduced fat kielbasa, diagonally sliced
1 15oz can pinto beans, rinsed and drained
1 15oz can black beans, rinsed and drained
4 medium carrots, chopped
3 medium celery stalks, chopped
1 large onion, chopped
1 teaspoon thyme
1 14.5 can diced tomatoes, undrained
1. Mix all ingredients, except tomatoes, in a 5 to 6 quart slow cooked. Cover and cook on low-heat setting at least 6 hours or until the beans are tender.
2. Stir in tomatoes; cover and cook in high-heat setting until heated through, abut 15 minutes more.
