I haven’t made a lot of guacamole.  I’ve eaten a lot of it, but I just haven’t made a lot.  I know.  Avocados are full of good fats, but they’re still fats.  And the hubs and I are doing the low fat thing due to his cholesterol issues.

 

So, I haven’t made a lot of guacamole.

 

I also haven’t experimented with guacamole either until I made this recipe with mango.  I never really thought to add more than the standard guacamole ingredients until I was asked to participate in this event.  It was rather eye opening for me.

I loved the combination of the sweet with the creamy and the spicy.  It was guacamole that was out of this world to me!  So, I thought of other ways to jazz up my guacamole.  There’s corn, lime, strawberry, chipotle, cactus; a myriad of other ingredients you could add to guacamole to make it amazing.

 

As I sit here writing this I’m thinking of a ton of OTHER ways to kick up guacamole for an appetizer or a main dish.  Guacamole salad?  Guacamole tacos or nachos.  I never really knew how versatile guacamole was until I started thinking about it.

I know.  Kiwi makes this a mostly green meal.  That can be good and not so good.  The not so good is some will be surprised with the kiwi flavor.  Maybe they don’t like kiwi.  Maybe they don’t like sweet with the creamy avocado.

 

But the good part of this is they will definitely be surprised.  It will be a flavor and texture that your guests or family will not know about until they bite into this delicious kiwi laced guacamole.  Not only will it have the sweet kiwi flavor, but it will have a crunch from the seeds of the kiwi.  Not that guacamole doesn’t have crunch from onions, but this is a different kind of crunch..

So, brief real life interjection here.  It has been a busy hectic tiring weekend.  The in laws came into town Wednesday night.  It was late.  I was tired.  We ate dinner at like 8.  Not good.  I hit the sack around 10. Also not good.  And I had to telework the next morning.

 

Friday we were site seeing and had busy but good day.  Then Saturday, we drove 4 hours to spend 2 hours at one place and one hour at another place and then drive 4 hours home.  Nutso.  I know.  But, it was a trip that was important, but not important enough for us to spend the night.  Which might have been cheaper.

Then Sunday I got up early to take the hubs to the airport because he went to Florida to be there for his mother’s 70th birthday.  Yes.  I know.  But we planned the first weekend before we knew about the second one.  There were flight tickets and visits to nursing homes in the mix.

 

And, I sit here wishing the hubs was home.  He wishes he was home.  It’s just been a rough weekend and a long weekend.  I’ve been trying to keep my email inbox cleaned on my work phone and the S has hit the fan with a program.  I told them it would be taken care of, but it just blew up.  Some people are just such drama queens.

It’s times like this where I could totally eat a whole bowl of this guacamole.  It’s sweet, spicy, delicious, and comforting all at once.  I love me some guacamole.  Dad made pretty good guac, so it truly is a comfort food to me.

Kiwi Guacamole

Kiwi Guacamole

Cook Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • 1 cup kiwi, peeled and diced
  • 1 cup avocado, diced
  • 1/2 cup diced tomatoes
  • 1/4 cup minced red onion
  • 1 tablespoons minced jalapeno
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon minced garlic
  • 1 - 2 tablespoons lime juice to taste
  • salt and pepper to taste

Instructions

  1. Coarsely mash the kiwi with the avocado in a large mixing bowl until slightly chunky and creamy. Stir in the diced tomatoes, red onion, and jalapeno.
  2. Add the chili powder, cumin, and minced garlic. Stir in the lime juice and season with salt and pepper to taste. Serve with tortilla chips.

  1. Jalapeño? The line under the photo says “The sweet kiwi and the creamy avocado pair well with the jalapeno in this delicious guacamole. Kiwi Guacamole is addictively delicious and perfect for summer nibbles.” But there’s no jalapeño in the ingredients.

  2. I would have never in a million years put kiwi in guac. I love guac but never make it. Maybe mix mango and kiwi in your next creation!

  3. I feel like I have been living under a guacamole rock! I love it and now want to try all of the new flavors. Sorry things have been so hectic, hopefully it all calms down soon! In the meantime I hope you snuck in plenty of guac while the hubs was away!
