Holy wow, y’all!!  Are you ready for some insanely good ‘cue for the summer holiday season?  ‘Cause this Memphis BBQ Pot Roast Sandwiches with Garlic Radish Cole Slaw is INSANELY GOOD!  Like the whole house smelled like a Memphis smokehouse insanely food.  Like, the hubs and I almost had to arm wrestle to see who was going to lick the pan, good.

I know I’ve gotten excited over recipes I’ve shared with y’all before, but this one?  This Memphis BBQ right here?  It’s will make you forget all those other smokehouses, sauces; you name it.  This is going to be THE ONLY barbecue recipe and sauce you’re going to need and/or use.

I just have to ask, have y’all seen the new BBQ sauces that Heinz has out?  If you haven’t run to the store and get them all!  All of them!!  Oh, and while you’re there pick up a bottle of their Heinz BBQ Classic Sweet & Thick.  For your convenience, here’s what it looked like in my local grocery store.

These sauces are nestled in with all the other sauces on the shelf of your local grocery store.  I easily found the Heinz BBQ Memphis Sweet & Spicy.  Next to it there was the Heinz BBQ Texas Bold & Spicy, which is BOLD and spicy!  Oh my word it was good.  Stay tuned for that recipe later.  So good.  Then there’s the Heinz BBQ Caroling Tangy Vinegar Style.  I haven’t tried that one yet, but can’t WAIT to get a bottle.

Since it was cold and snowing this weekend, I thought I’d do a “pit” roast in my oven with a delicious rump roast.  It had just enough marbling to be tender and perfect beef flavor.  Now, add to that this smoky and delicious Heinz BBQ Memphis Sweet & Spicy and you have heaven on a bun.  Honestly.  The smoky flavor was clear through the meat.  It was tender and juicy and almost sinfully good.

For the Heinz BBQ Memphis Sweet & Spicy they grilled – well, not literally – Dan Brown to see how he makes that infamous Memphis sauce that Leonard’s Barbecue has become famous for since 1922.  Did you know, it’s the OLDEST operating barbecue restaurant?  They have to know a thing or two about Memphis sauce there, which is why Heinz headed to Leonard’s Barbecue.  If you want to make the best sauce, you have to learn from the pros!

Now, a word about the slaw.  This is not your ordinary slaw.  And please, don’t be put off by the amount of garlic in the recipe.  It’s not going to have that raw garlic bite you’re thinking about.  Trust me.  By processing the garlic with the vinegar, you’re essentially infusing the vinegar with that amazing garlic flavor without all that tang and punch that raw garlic can have.  Yes.  It’s going to stink up your fridge, but it’s not going to taste NEAR as strong as it smells.  You’re going to love it.

You’re also going to love that crunch and kick that the radishes offer up to this slaw.  Between the garlic flavor, the sweet tang of the slaw dressing, and the crunch of the radishes, I’d be surprised if this isn’t your new fave slaw recipe.  I know it’s going to be mine and I’m going to bring it to all the cook outs I attend this summer.  You’ll be the envy of all the diners around your Fourth of July picnic, your Memorial Day gathering, your summertime pool party.  I KNOW this.  Just trust me.

Now, if you’re like me, you’ll not going to serve just any beans.  So, while I was at the store I picked up a bottle of the Heinz BBQ Classic Sweet & Thick.  It’s so good!  Slightly sweet, smoky, spicy; it’s the perfect additional to some plain old baked beans.  Once you add the Heinz BBQ Classic Sweet & Thick they’ll turn into the most amazing beans you’ve ever served.

There’s that slaw again!  After it sits for a minute (or a day) the red from the radish will start to color the cabbage and make it pink.  That means that all the flavors have melded together and you’ll get the most amazing flavor explosion in your mouth with every bite you take.  You can just tell by looking at it that it’s going to pack a powerful punch.

Oh yeah, baby.  This was my lunch.  Jealous, aren’t you??  I would be!  I want another one for lunch today!  It honesty was so good.  The best pot roast I’ve ever made and I will making more of them time and time again.  The hubs and I both agreed it was, hands down, the most amazing pot roast I’ve ever made.  And I owe it all to Heinz and their Heinz BBQ Memphis Sweet & Spicy sauce.

Ingredients

  • 2 teaspoons olive oil
  • 2 pound rump roast
  • 1/2 cup root beer
  • 20.4 ounces Heinz BBQ Memphis Sweet & Spicy
  • 4 cups shredded radishes
  • 6 cups finely shredded cabbage
  • 12 to 16 whole (with peel) cloves garlic
  • 1/2 cup cider vinegar
  • 1 cup mayonnaise
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cayenne pepper
  • 8 hamburger buns

Instructions

  1. Preheat oven to 325.
  2. Heat a Dutch oven over high heat. Add the oil and swirl to coat. Sear the roast on all sides until nicely browned. Remove from heat.
  3. Carefully add the root beer to deglaze the pan; scraping to get any browned bits of roast off the bottom of the pan. Pour the Heinz BBQ Memphis Sweet & Spicy over the roast.
  4. Bake at 350 F for 30 minutes. Remove from the oven, baste with the sauce, and cook an additional 30 minutes. Continue cooking the roast, basting every 30 minutes, for at least 2 1/2 hours or more depending on the size and thickness of your roast. I went a little shy of being able to shred it with two forks. I wanted the beef to be very tender, but still maintain that roast beef texture.
  5. Remove from the oven, baste, and allow to rest, covered, at least 15 minutes.
  6. While the roast is cooking, prepare the slaw.
  7. Place the garlic (whole) in the bowl of a food processor along with the vinegar and process until the garlic is finely chopped. Strain with a fine mesh strainer and place the vinegar in a small mixing bowl along with the mayonnaise, sugar, and cayenne. Stir well using a whisk.
  8. Combine the radishes with the cabbage. Pour the dressing over the mixture and toss well to coat. Refrigerate until serving.
  9. Once the roast has rested, thinly slice or chop the meat and return the meat to the sauce. Place a bun on each of 8 plates. Top with a spoonful of beef and a spoonful of sauce. Serve with the slaw and some Heinz BBQ Sauce Classic Sweet and Thick baked beans.

    1. I know, right?? Thank you!! And, to top it all off, I took the one slice of left over beef, the left over slaw, and make a KILLER grilled cheese with some cheddar and an inside out hamburger bun. So SO good!!

  1. Ooh, haven’t done a BBQ pot roast, but now I think I have to. Also, the Heinz BBQ Carolina Tangy Vinegar Style? To. Die. For. I love it. Absolutely. Like I don’t even need to make my homemade sauce anymore, because I love the Heinz sauce so much.
