This was not supposed to be this.  I mean, these ingredients were supposed to be a remake of my easy Swedish meatballs recipes.  But, I just didn’t have it in me to make meatballs on a weeknight.  I know.  It’s Easy Swedish Meatballs, but I still just didn’t have the energy to make them.  What’s a food blogger to do?  Improvise!!

The hubs said, “I thought we were having Swedish meatballs?”

“We are!  Just not in meatball form”

“Ooooohkay!”

He’s learned, after all these years, to simply not question me sometimes. 

When I get an idea, he just gives me room to run and get it out of my system.  And I think he was pretty glad I did.  He had a little extra when all was said and done with this dish.

This year, I’m trying to cook from the pantry and freezer.  I’m also working on some simple, one pot or one pan meals along with some easy sheet pan meals.  I made one this week that I can’t wait to share with you.  It was seriously hands off, delicious, and easy to make for any busy family.  I need to make more of those…

This year is also about cutting our expenses.  We just cut our bundled cable and phone and simply have internet.  That’s still quite a chunk of change.  I may look into Comcast, which is also available in our area.  Since we’re going to be steaming most of our entertainment, I’d like it not to cost a fortune!  Right now, we’re down $30 from previously and have a few more channels we didn’t have before.  We signed up for Direct TV Now.

Can I just share with you my frustrations at trying to remove cable and phone from my services using the online chat function of my service provider?  Great!  So, I clicked on the online chat feature since I couldn’t figure out how to unbundle stuff and just have internet.  They asked why I wanted to remove cable and phone.  I said, “Because I have to have tiers of channels and can’t pay for only those channels I watch.”

“You can’t sign up for On Demand shows on the internet.  You have to use your remote.”

“Um….I wasn’t asking about on demand services.  Nevermind.”  I went on to explain that I wanted to upgrade the internet to 75Mbps.  They quoted me an insane price!  Because they gave me the price for 150Mbps.  Um…that’s not what I asked for.  Didn’t you read my request?  I only want 75Mbps.

Later in the conversation, I asked about just the modem.  They offer a router modem combination and, well, their router sucks!!  We have a three story townhome and can only get good signal on the main floor.  We’ve since bought one of those hub things.

Anyway, they kept talking about the router.  I kept asking about just a modem and they kept saying router.  I said I didn’t want a router, just a cable modem.  We went round and round, it had been about 45 minutes and I simple gave up.  I told them to just cancel everything we had done and I’d call customer service.

They said, and I kid you not, “So you want to cancel all of your services?”  What the…??  NO.  That’s not what I said.  You’re really not understanding the words that I’m typing.  I said to cancel everything we done TONIGHT!  Oh my word.  It was the most frustrating customer service experience I’ve ever had.

I just had to share that.

With nights like that one, you need a simple, quick, and COMFORTING dinner to eat.  I called them last night and accomplished everything I needed in less than 20 minutes or so.  Of course, this was after having a slow cooker dinner, so no worries about how long it would take.

What does One Pot Swedish Beef Pasta taste like?

This tastes just like Swedish meatballs, but in a quick, easy, one-pot meal.  I even throw in a hint of caraway seeds for a more authentic taste.  Yes, I put caraway seeds in my Swedish meatballs along with a pinch of nutmeg.  These are flavors that, to me, are traditional Swedish flavors that should be in the famous meatballs.

So, of course, they’re in this one pot version.

The sauce is super creamy with the broth that’s thickened with the starch from the noodles and then the zing from the sour cream.  Oh yeah.  I brought it.  You’re not going to miss rolling those meatballs by hand and will be asked to make this all the time by your family.  I know the hubs wants to have this again, soon!

One Pot Swedish Beef Pasta

Cook Time: 20 minutes

One pot, one pound of beef, and one package of egg noodles makes for a delicious and easy One Pot Swedish Beef Pasta that your family will love.

Ingredients

  • 1 pound ground beef
  • 1 cup thinly sliced onion
  • 8 ounces sliced cremini mushrooms
  • 1 teaspoon garlic salt
  • 1 teaspoon caraway seed
  • 12 ounces egg noodles, uncooked
  • 3 1/2 cups beef broth
  • 1/2 cup sour cream

Instructions

  1. Heat a Dutch oven covered with cooking spray over medium-high heat. Crumble the beef into the pan and add the onions and mushrooms. Saute until the beef is browned and the onions are tender.
  2. Add the garlic salt, caraway seeds, and egg noddles. Stir in the beef broth. Bring the broth to a boil, cover, and simmer 10 to 15 minutes or until the noodles are cooked.
  3. Remove from heat, stir in the sour cream, and serve.

  1. Are you able to freeze the baked dinner? If so, what are the pasta like after you bake frozen dinner?

    1. You can, but the pasta might not be as delicious afterwards. I find cooked frozen pasta to be a bit too soft to my taste. But that’s entirely up to you!

  2. Looks yummy! I’m 99% sure I see mushrooms in the pictures but not in the recipe. Am I right? I am a mushroom lover, so I’m curious.

  3. So many of my meals turn out like this! I don’t have it in me to do some extra magic but I want the meal!! I can’t tell you how many meat sauces I made because I didn’t want to roll the meat into balls. I love that the love is all still there, and the flavor, and it’s one pot, and still tasty as ever!!

    1. Thank you! It wouldn’t be so bad, but we honestly watch like 15 or so channels. When you put it that way, TOO expensive for just a few channels. I want to pay for what I watch. Too much to ask.
