Barbecued-Beef Sandwiches

April 11, 2008

Barbecued-Beef Sandwiches Cooking Light, September 1999 So, it all depends on the barbecue sauce, obviously. The only stuff I had on hand that I could think of was this chocolate barbecue sauce. It didn't taste like chocolate, obviously, but it was more sweet than I think CTM would have liked. I liked it. I thought it was really good, but a little on the sweet side. I threw it all in the crock pot and allowed it to cook while we were running errands on Saturday. Oh, and making cole slaw … [Read more...]

Beef Bourguignonne with Egg Noodles

April 11, 2008

Beef Bourguignonne with Egg Noodles Cooking Light, September 2004 True to form, I didn't really follow the recipe. I took the chuck roast and seared it in the pan instead of using stew meat or chopping it up. I also forgot the pearl onions. OOPS! I put everything in the crock pot to cook while we were at work. When I got home, I made the noodles and added a slurry to the stew to make a gravy. Interestingly enough, the carrots were REALLY bitter. I think they soaked up too much of the red … [Read more...]

Chipotle Turkey Cutlets

April 9, 2008

Chipotle Turkey Cutlets Cooking Light, March 2002 Holy spicy turkey cutlets!! For those that don't know, chipotles are roasted jalapenos. If you like UBER spicy food, make this recipe as is. If you don't like mouth burning, flaming asshole recipes, then cut the chipotle powder with regular chili powder. The cocoa powder makes it kind of like a mole, but it was so spicy, I don't think we really could enjoy it. Neither of us wanted to take the left overs for lunch the next day. I think CTM … [Read more...]

Baked Snapper with Chipotle Butter

April 9, 2008

Baked Snapper with Chipotle Butter Cooking Light, May 2003 SPICY! This is REALLY SPICY! If you don't know, chipotles are roasted jalapenos. If you don't like it really spicy, cut the chipotles in half, remove the seeds, and only use half of the pepper. We put the dry rub on and cooked the tilapia (didn't have snapper) in the toaster oven to cook. When they came out, we spread the butter on them. It was really good, but really SPICY! Measuring cups and spoons Knife Cutting board Small … [Read more...]

Orzo, Corn, and Roasted Bell Pepper Salad

April 9, 2008

Orzo, Corn, and Roasted Bell Pepper Salad Cooking Light, July 2005 True to form, I didn't really follow the recipe. I THOUGHT I had roasted peppers in the fridge, but I didn't. CTM found this corn southwestern style mix by Birdseye, so I used that instead. I had orzo prepared from the night before, tossed it with the veggies that I heated in the microwave, and then chopped up a chipotle to make it match the fish we were having. It was DELICIOUS!! I had a little bit of it for lunch the next … [Read more...]

Spicy Honey-Brushed Chicken Thighs

April 8, 2008

Spicy Honey-Brushed Chicken Thighs Cooking Light, March 2007 These were very yummy and spicy! I couldn't taste much of the honey, though. Hm... I coated the thighs in the rub that morning. Then we put them in the oven with the potato wedges, so we didn't broil them. After about 30 minutes, we took them out and basted the one side, turned them over, basted the other side, and put them back in to finish. After about 45 minutes at 450, they were done! I know we'll be making this one … [Read more...]

Chicken Thighs with Marsala-Mushroom Cream Sauce Over Noodles

April 8, 2008

Chicken Thighs with Marsala-Mushroom Cream Sauce Over Noodles Cooking Light, May 2001 Well, this one didn't turn out so great. The Marsala-Mushroom Cream Sauce Over Noodles was good, but the chicken was bad. I mean, it was bad before I cooked it apparently. It smelled fine to me, but didn't taste so good. *herck* So, we just had the sauce with the noodles. That was REALLY good and I can imagine the chicken thighs would have been mighty tasty with it. We'll have to try it again as thighs are … [Read more...]

Chicken Thighs with Goat Cheese Sauce and Tarragon

April 8, 2008

Chicken Thighs with Goat Cheese Sauce and Tarragon Cooking Light, May 2001 O M G these were deliscious!! There is A LOT of tarragon in this recipe, though. If you don't like licorice you might not like it. I had to buy two packages to meet the 1 1/2 cups in the recipe. I LOVE goat cheese, too. It's been the most recent addition to my cookinf reportoire and I LOVE it!! I make the Chicken with Rotini which is topped with goat cheese A LOT. It was strange to mix the cheese and the broth then … [Read more...]
