HOLY!  I did 500 posts and didn’t even know it!!  Actually 503 to be exact!!  Shows ya how much I pay attention…to my own blog even!  *snort*  I was just too excited to post my #GYCO chocolate creations to notice.  LOL
Yeah.  So.  I had to take a break.  I busted my hiney getting all my chocolate entries done.  Don’t get me wrong, I LOVED making them.  They all tasted delicious.  I just didn’t plan very well…  I truly have been a sloth on the weekends lately.  S working every weekend really puts a damper on motivation.

 

This was just supposed to be regular Alfredo, but I forgot to get more parm.  Since we’re doing the low fat think, we have the canned stuff, but you just can’t make Alfredo with that.  It just doesn’t work right.  On the way home on Monday I was trying to think of what cheese products we have that we COULD use.

 

Tuesday, I receive this generic email about “activity” on 14th.  The street will be closed between Pennsylvania and G.  GREAT!  We come up 15th, cut over to 14th on F and then S turns around and goes back up 14th to get to work.  Yeah.  Ain’t happening until they fix the GIANT sinkhole in the middle of the intersection.

That’s looking up F from 13th towards 14th.  That giant crane?  It’s in the middle of the intersection of F and 14th.

 

See the hole?  In the intersection?  Wait, let me get a little closer for ya.

How about now?  Good?  Yup.  It’s a commuting NIGHTMARE!  As if the traffic in DC isn’t bad enough, but now we have THIS to deal with.
 
 

I can see it from my office window.  *sigh*

 

I’m not sure ALL of my readers understand the full scope of the traffic that is involved in this scenario.  14th is a MAJOR…I repeat M.A.J.O.R. road in this city.  To close even a portion of it?  Gridlock like you can’t even BEGIN to imagine.  Well, those in LA might be able to.  Maybe NYC, but I don’t quote me on that one.  HUGE.

 

It’s just been a shit month so far.

 

So…on to the recipe!

 

Heat a large skillet coated with cooking spray over medium heat.  Add mushrooms and cook until browned and the juices have released.

Process the cottage cheese in a food processor until smooth.

Add milk and blue cheese powder (or crumbled blue cheese) and process until combined.

Toss hot pasta with cheese sauce and stir until combined.

Add mushrooms and fold until the mushrooms have a nice coating of sauce.

Serve with a nice crusty loaf of French bread. (not pictured)

Ingredients

  • 3 large portobello mushroom caps
  • 8 oz pasta, cooked
  • 1 c fat free cottage cheese, processed
  • 1/4 c skim milk
  • 4 oz blue cheese powder

Instructions

  1. Heat a large skillet coated with cooking spray over medium heat. Add mushrooms and cook until browned and the juices have released.
  2. Process the cottage cheese in a food processor until smooth. Add milk and blue cheese powder (or crumbled blue cheese) and process until combined.
  3. Toss hot pasta with cheese sauce and stir until combined. Add mushrooms and fold until the mushrooms have a nice coating of sauce.
  4. Serve with a nice crusty loaf of French bread.
