So, this is round 5 for me with the #FreakyFriday group. “What’s #FreakyFriday” you ask? Well, it’s hosted by Michaela from An Affair of the Heart. There are 13 bloggers participating in the event this month. If you are new to my blog, welcome!  Here’s the 411.

Each blogger who signs up is assigned a blog from another participant. Like me, for instance. I was assigned Platter Talk. Once you receive your assigned blog, you get to go through their recipes and pick something you want to cook.  In honor of football season starting, I chose these delicious Brat Bites to cook up this round.  Then, once you cook up your selected recipe, you post about on the #FreakyFriday; telling everyone about their wonderful blog, what you found out, and how delicious their recipe was!

I just have to say, holy wow.  Platter Talk is two dads, six boys and a chihuahua.  Wow.  Just…wow.  I thought it was bad with just the four of us growing up, but 8?  I cannot imagine.  Truly speechless.  More power to them for raising such amazing looking sons and to hear that they have interest in helping out in the kitchen is always awesome.  A man who can cook will never be alone.  Just sayin…

Moving on.

Dan and Scott, the dads behind Platter Talk, have been featured on countless sites, newspapers, and morning news programs.  They’ve won quite a few recipe contests, too!!  And for good reason.  Their food looks amazing.  I have marked many to try after this round of #FreakyFriday.  From these Brat Bites to their Tortellini in Brodo Destiva to their Smoked Gouda with Crab and Bacon Mac n Cheese, they have quite a range of recipes.  I saved their Raisin Apple Butter Bread for later in fall when apples are in season.  It looks delicious and perfect for a fall morning.

Not to worry!  There’s plenty of sweets on their blog, too!  There’s Chocolate & Coffee Whiskey Cake, a Cranberry Swirl Semolina Cake, and delicious looking Cannoli Poke Cake.  Yeah.  I’m drooling over that last one, too. Cookies?  There’s the Chambord Christmas Crinkles and S’more Cookies.  I could go on and on.  So, when I say it wasn’t easy choosing what to make, I’m serious.  They have a huge selection from all types of food and cuisines.

I’m always stuck in the appetizer category because we just don’t make them at all.  Unless Dad’s coming for dinner, we usually don’t have snacks or appetizers for any reason.  Well, there’s one reason and that’s usually #FreakyFriday.

Now, I have a whole list of recipes I earmarked to try, but the one that just kept coming back to my mind were these Brat Bites.  They were just calling to me.  Seriously.  I mean.  Just look at them.  You can’t see those babies and tell me you’re not drooling.  All that crunchy phyllo dough and those delicious sausage bites.  Yup.  I’m drooling, too.

Of course, I didn’t use brats. 

I used those little cocktail wieners.  Because they’re almost a requirement for any game day eats.  Right?  Simmered in some kind of delicious sauce with grape jelly or something like that?  We’ve all had them!  Grab a toothpick and just go to town on that slow cooker full of goodness.

Well, not this time.  This time, I’ve baked those little buggers into some crispy deliciousness that’s sure to please all your game day guests.  I’ve added a little dollop of mustard before wrapping the sausages for a little kick.  This is a whole grain mustard I’ve used, but you could use any mustard you want.

And you can use brats. 

I didn’t use brats because they’d have to be the turkey kind.  To be honest, those aren’t the easiest things in the world to try to slice and wrap.  They’re usually much softer in consistency than regular brats which makes slicing and even holding them a pain in the you know what!!

These babies came together so easy.  I made 8 and it took me about about 10 minutes.  So, you could easily increase this recipe for a large tailgating crowd!  It’s undeniable that your crowd will love these beauties, too.  They’re super crispy on the outside.  They’re tender and spicy on the inside with the sausage and the mustard.  I’m so happy that I stumbled on this simple yet amazingly delicious recipe for my game day eats.

Sausage Bites

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Tailgating season is upon us! I can't wait to share these Sausage Bites; a spin on Brat Bites from Platter Talk.

Ingredients

  • 8 sheets phyllo dough
  • 8 mini sausages
  • 2 tablespoons whole grain mustard
  • Cooking spray

Instructions

  1. Preheat oven to 400.
  2. Keeping the remaining phyllo covered with a damp cloth, place one sheet of phyllo on your work surface and spray with cooking spray (or brush with butter). Place a second sheet on top and spray with cooking spray. Continue until 4 sheets are stacked and sprayed with cooking spray. Cut the stack into quarters.
  3. Place one sausage and a half a teaspoon on the end of a phyllo rectangle. Fold the sides over and then carefully roll the sausage in the phyllo dough. Place seem side down on a baking sheet lined with a silpat or aluminum foil coated with cooking spray.
  4. Lightly spray the sausages with cooking spray and bake at 400 for 15 to 20 minutes or until the phyllo is golden brown. Serve with additional mustard, roasted red pepper ketchup, or sweet onion chutney.
