I love waffles.  All kinds of waffles.  I love the sweet, Belgian kind that I’ve never made.  And I love the savory kind that I try to make all the time.  For those of you that are new to my blog, my husband doesn’t like sweets for breakfast.  So, that means if I want waffles, they have to be savory.

Which is why these Scallion Waffles went on the menu.  You see, I had already planned a couple of Asian meals this past week.  One of them didn’t get made.  It’s going on the menu next week.  But this one recipe that I was thoroughly excited to make WAS on the menu and I did make it.  And it was delicious.

In the creative process of writing that recipe, and seeing that Sue was hosting a waffle event, I knew I had to marry the two together.  I mean, you can’t very well put potsticker sloppy joes on just any kind of bun.  Initially I thought about a moo shu type pancake, then it was just over rice, but finally settled on a scallion waffle.  It would be the perfect vessel to serve up these sloppy joes.

I have never actually eaten a scallion pancake.  I’ve made plenty of moo shu ones but definitely not a scallion one.  Heck, if it wasn’t for the Food and Wine Conference, I wouldn’t have had a steamed pork belly bun.  It’s just not something I would have ordered on my own.  Dunno.  Just wouldn’t.  I’m not actually sure that I’ve seen it ON a menu.  Then again, we don’t go out to fancy Asian restaurants.

Anyway.

Getting back to the hubs.  He’s pretty tolerant of my WAY outside the box recipe ideas.  Today was one of them.  Usually when we get home, we put comfies on, then he walks the Missy girl, and I head to the kitchen to start dinner.  When he comes in from walking the dog, he makes us a drink and asks, “What’s for dinner?”

To which I recite what’s listed on the monthly menu that’s on the refrigerator.  “Pots ticker Sloppy Joes with Scallion Waffles.”  You should see the look on his face sometimes.  It’s priceless.  “Oooohkay!” he says and proceeds to the living room to answer emails, pay bills, etc.  One of these days, he’s just going to flip and ask for pizza or something instead of what’s on the menu.

THESE were on the menu.  Along with some delicious potsticker sloppy joes on top of them.  They’re a perfect pair.  These waffles have a hint of soy and sesame flavor, delicious scallions running throughout, and the crunch of some toasted sesame seeds on the outside.  They’re tender on their own and have perfect ridges to capture anything you want to put on top of them.

Stir fried rice and an over easy egg?  Yup!  That would be great for breakfast.  Take two and make them as a bahn mi type sandwich for lunch.  Whip up a tasty stir-fry with some chicken or beef and a savory sauce for dinner.  These waffles can meet the challenge of any meal.

Scallion Waffles

Just like scallion pancakes, these Scallion Waffles are packed with delicious Asian flavors. Serve them topped with Potsticker Sloppy Joes or your favorite stir-fry recipe.

Ingredients

  • 3/4 cup flour
  • 1/2 cup buckwheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 whole egg
  • 1 cup buttermilk
  • 1 teaspoon ground ginger
  • 1 teaspoon ground garlic
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame seed oil
  • 1/2 cup chopped scallions
  • 1 teaspoon sesame seeds

Instructions

Preheat a waffle iron.

Combine flours with the baking powder and salt. Set aside.

Combine the egg with the next four ingredients (ginger through sesame seed oil).

Make a well in the center of the flour mixture and add the egg mixture. Stir until just combined. Fold in the scallions.

Lightly spray the waffle iron with cooking spray or brush with melted butter. Sprinkle a pinch of sesame seeds on the bottom of the iron. Pour 1/4 to 1/3 cup of batter (depending on your waffle iron) into the bottom of the waffle iron. Sprinkle with another pinch of sesame seeds and cook according to manufacturer’s instructions.

Keep warm before serving with Potsticker Sloppy Joes or your favorite Asian dish.

  1. I absolutely LOVE the idea of serving sloppy joe type meat over a waffle! This is giving so many ideas. And too funny about your husband asking what is for dinner and just going with it. Mine always asks, too. He always gets excited when it’s something that doesn’t really have a name… those are his favorites when I just get creative with whatever I can find. You are so organized having a monthly menu ready to go!

    1. Thank you! My recipes almost always have a name. I’m a planner where the dinner is concerned. I usually have at least three weeks of menus planned or in the plannin stages. I’m not a fly by the seat of my pants type person unless I have to be. Like when I FORGET to take meat out…

  2. Love the Asian twist on these, Christie! Scallion pancakes are one of my favorite things and I was hoping you had gone that direction when I saw your title in the list.

    1. Having never had a scallion pancake, I can only imagine what they taste like. These are pretty darned good!! Even the hubs thought they were decent, which for a waffle, is pretty good!
