Pineapple Bliss Cupcakes

Pineapple Bliss Cupcakes I made this as a cake.  Don't.  I've never tried the pumpkin version of this.  After this attempt, I'm not sure I will. The cake was crumbly.  VERY crumbly.  I mean, it just fell apart in the pan when I was trying to cut it.  In all the years of baking cake, from scratch or a box, I've NEVAH had that happen.  EVER! Frozen Reese’s Peanut Butter Pie

Frozen Reese’s Peanut Butter Pie They should call this PB Crack Pie.  I could eat just the filling with a spoon.  I didn't add any of the Reese's minis that it calls for.  I wonder if you could just melt some chocolate in the bottom of a pie pan and pour this filling in on top?  I'm not sure I liked the graham cracker crumb crust with this pie.  Maybe pour melted chocolate into the bottom before pouring the filling in?  *shrugs* This was so light.  Sooooooooooo yummy!!  Tasty, quick, easy, … [Read more...]

Fresh Strawberry Upside Down Cake I'm still trying to figure out what the marshmallows are for.  *shrugs* I forget to check to see what type of cake mix I had in the cabinet.  It was chocolate, so I made a chocolate version with LF ingredients.  I use applesauce in place of the oil and egg beaters instead of eggs. Banoffe "Danger" Pie DANGER IS RIGHT!  OMG!!  *rewinds*  So, I knew you could take sweetened condensed milk, simmer it forever and it would turn to caramel, but I wasn't sure about the FF version.  Well, it worked and OMG is it AMAZING!! Perfect Couple Pie Doesn't this look fantastic??  I was drooling at the pic!!  I wasn't, however, drooling at the high fat content.  So, I adjusted it. I don't play with RF PB.  It just don't act right.  Everything else was RF or FF if possible.  Oh, and I also don't play with FF cream cheese unless it's mixed with RF in cheesecake.  It just doesn't look natural AT ALL! No-Bake Fresh Strawberry Pie COOKING LIGHT, MAY 2012 I cheated on the crust and bought an Oreo one.  Next time I won't be lazy and make the pie crust. The cream cheese mixture was really thick which made it difficult to fold in the whipped topping.  Not sure I got it folded in all the way, but *shrugs*. Tropical Banana Cupcakes

Tropical Banana Cupcakes COASTAL LIVING, MARCH 2012 I took this idea and altered it it a bit.  I reduced the fat, but I'm not sure by how much.  I used Egg Beaters and ICBNB.  I didn't include the coconut and used pecans.  Then I made a basic cream cheese frosting with RF cream cheese and powdered sugar with about 2 T of ICBNB mixed in.
