Tuscan Spice Mix

June 20, 2014

Not quite the same as an Italian spice blend, this Tuscan Spice Mix not only has the flavors of Tuscany, but has a kick with some crushed red pepper.

Not quite the same as an Italian spice blend, this Tuscan Spice Mix not only has the flavors of Tuscany, but has a kick with some crushed red pepper.   There are so many different types of pre-made spice mixes out there. While they taste good, I want to know what's in them so I can make them at home. They’re sometimes not so cheap to purchase and you don’t really know how fresh the ingredients are in that little jar.   While I trust the more mainstream brands, I don’t trust … [Read more...]

Spanish Style Hunter Chicken

June 7, 2014

Let your slow cooker do the work with this delicious chilindron style stew. Slow Cooker Red Pepper Stew is a Spanish version of a cacciatore so make sure to get creative to use what you have on hand!

A Spanish style take on the traditional cacciatore, this Spanish Style Hunter Chicken has the heartiness of cacciatore with some Spanish flair! Since it’s made in a slow cooker, you can enjoy this year round!   I make cacciatore quite often, or at least I used before I upped my blogging posts beyond just recipes I’ve tried. I think I’ve made a slow cooker version of the Italian version of this dish at once every three months or so? *shrugs*   So, it was only natural to take a family - and by … [Read more...]

Coq au Vin

May 29, 2014

Silky smooth and deliciously rich, the red wine sauce is decadent over the slow braised chicken thighs.  Coq au Vin is truly worth the effort to make and is a stunningly delicious meal to prepare.   Today is Coq au Vin Day, so I’ve whipped up a batch for dinner in celebration.   Listen to me, “Whip up a batch.” As if it’s possible to make this in under an hour. I think it took me about an hour and half including the prep time? I think? Not that I’m complaining. This was O.M.G. … [Read more...]

A unique twist on the dessert cookie that has pepperoni and ricotta, these Pepperoni Pizza Macaron are sure to be a conversation starter no matter where they're served. Mom was in town for a whirlwind day and a half. Luckily, I have a great boss who gave me the time off and I have an AMAZING husband who changed his Thursday so I could spend more time with Mom. Can I just say, it still seems weird to say, “husband?” S and I have been together longer than any other relationship I’ve ever had. It … [Read more...]

Greek Panzanella with Pan Seared Chicken

May 15, 2014

Greek Panzanella with Pan Seared Chicken is amazingly delicious. It has all the elements of a panzanella salad, but with a Greek twist.

Greek Panzanella with Pan Seared Chicken is amazingly delicious.  It has all the elements of a panzanella salad, but with a Greek twist.   So, my plan on having slow cooker meals on Tuesdays and salads on Thursdays isn’t working out so well. Inevitably, something happens and I have to swap them back. Like this Greek Panzanella Salad with Pan Searched Chicken. I completely forgot to take out beef for the slow cooker meal that I’ve been trying to perfect for a few weeks now. So, … [Read more...]

Slow Cooker Chicken Kiev

March 15, 2014

With the buttery dill flavor of the traditional dish, Slow Cooker Chicken Kiev takes all the work out of this delicious dish.

With the buttery dill flavor of the traditional dish, Slow Cooker Chicken Kiev takes all the work out of this delicious dish. This is more of a do as I say not as I do type of thing.  I am not a professional.  I do cook good food, most of the time.  Sometimes, I need to edit the recipe a bit when I write it to ensure a better outcome for you.  These edits are adjustments based on what I know will work.   I don't have a team of professionals helping me.  I … [Read more...]

Slow Cooker Hungarian Style Pork Stew

February 22, 2014

It's been a HORRIBLE week at work.  I can't stress the HORRIBLE enough.  Thankfully, I have food like this to come home to. Heh.  S was taking pictures in the kitchen while I was dishing this dish up.  He's so cute when he does that. Since we've had a run of noodle dishes, I opted for rice on this one.  You can swap it out with noodles if you want.  I, for some reason, wanted rice.  I like rice.  No.  I LOVE rice.  Basmati rice or … [Read more...]

Greek Style Couscous Salad with Scallops

February 9, 2014

Their sweet flavor and delicious taste are just… YUM! And in this salad? Even better!!  Greek Style Couscous Salad with Scallops is a quick, easy, and AH-mazing dinner salad for any night of the week.   We.Love.Scallops.  Sea scallops especially.  Don't get me wrong, bay scallops are okay, too, but they're smaller and more chewy if you're not careful.  I can't even remember the first time I had them.  I'm sure it was something my mother pushed on me to … [Read more...]
