Irish Nachos with Beer Cheese Sauce

March 11, 2018

Irish Nachos with Beer Cheese Sauce

Layers of crisp baked potatoes are sprinkled with corned beef, Irish cheddar, and drizzled with a beer cheese sauce.  Irish Nachos with Beer Cheese Sauce are stacked with delicious, cheesy flavors.   There are hundreds of cheeses in the world.  HUNDREDS!  I haven’t even touched the iceberg in tasting cheese.  However, I feel like I’ve had a few more types of cheese this past year than in years past.  I’ve tasted stilton and manchego.  There’s been a … [Read more...]

Polish Coddle

January 25, 2017

An Irish coddle is a dish with pork sausage and rashers cooked with potatoes and onions as a stew or soup. My Polish Coddle uses kielbasa, potatoes, and onions topped it with mini pierogies.

A Dublin coddle is a dish with pork sausage and rashers cooked with potatoes and onions as a stew or soup.  My Polish Coddle uses kielbasa, potatoes, and onions topped it with mini pierogies.   Sometimes I have an idea and the hubs reads the menu out loud sort of questioning the recipe title.  He did just that with this recipe.  And I’m sure you’re sort of doing the same thing.  I bet y’all don’t even know what a regular coddle is, and no I’m not talking about eggs.  Because you can coddle … [Read more...]

Potato Leek Pie

March 10, 2015

Just in time for St. Patrick's Day, this tender and flaky Potato Leek Pie is filled with hearty potato goodness, subtle leeks, and scrumptious cheese.

Just in time for St. Patrick's Day, this tender and flaky Potato Leek Pie is filled with hearty potato goodness, subtle leeks, and scrumptious cheese. I have a confession to make. This is so embarrassing. I can’t believe I’m telling y’all this. Okay. Here goes.     I’M A VIRGIN!   A puff pastry virgin that is. Honestly. I’ve never used to stuff, never made the stuff, but LOVE eating the stuff. Seriously. I’ve never made a single thing in my life with … [Read more...]

Irish Brown Soda Bread

March 26, 2013

Irish Brown Soda Bread

Irish Brown Soda Bread is required every year for St. Patrick's Day.  This version is hearty, simple, and delicious. My brain is like a sieve...and other songs by Thomas Dolby. I have no clue how in the world I skipped this post. Better late then never? Maybe I was so booked with all my other baking and cooking that it just...slipped my mind? Who knows!! LOL And this is a TOTAL staple in our house come St Patrick's Day. If I don't have this AND corned beef and cabbage...well just … [Read more...]

Irish Coffee Cupcakes with Bailey’s Chocolate Filling

March 20, 2013

Irish Coffee Cupcakes with Bailey's Chocolate Filling

Irish Coffee Cupcakes with Bailey's Chocolate Filling are healthy-ish and delicious! The whole wheat pastry flour keeps them light, the buttermilk keeps them moist, and the ganache makes them decadent! I had such high aspirations to bake 2 types of cupcakes this weekend.  Didn't happen.  Surprising I know.  I was lazy this weekend.  I thought, "I have tomorrow, too!  We took Monday off."  Yeah.  Still didn't happen.  I baked the cupcakes and let them cool.  And then...nothing.  no ganache, no … [Read more...]

Corned Beef and Cabbage Dinner

March 17, 2008

Corned Beef and Cabbage Dinner Cooking Light, MARCH 2003 Well, it's not too hard to mess this up. Of course I made it in the crockpot and didn't do the mustard breadcrumb topping thing. I did, however, add too much pickling spice so it was a little on the allspice and clove side for my liking. Of course, I ate ALL the leftovers because CTM isn't too fond of corned beef. Oh well! All the more for me! Knife Cutting board Measuring cups and spoons Crockpot Wooden spoon … [Read more...]
