I would combine some cornstarch with the cream to make it thicken better. Of course, we couldn't find morels so I substituted shiitake mushrooms instead. Crab-Stuffed Mushrooms Recipe courtesy Paula Deen These received rave reviews. I think Dad ate most of them. *snort* They were really easy to prepare. I blended the cream cheese with the herbs and it was rather thick. I thinned it out with a little milk so I didn't have to mutilate the crab when I tried to fold it in. It made LOTS of filling.
