African Beef and Peanut Stew
This unusually delicious African Beef and Peanut Stew is not sweet. It doesn’t take like you slathered your pot roast with peanut butter. Not at all! It’s rich and silky from the peanut butter with delicious beef stew ingredients.
Well, it was upside down when I came across it. IT.WAS.HUGE! I mean, the LARGEST beetle I’ve ever seen IN MY LIFE! It’s the Eastern Hercules Beetle; the largest beetle in the US. WOW. I had no idea things like this existed in the US and I thought only super huge things grew in places like the Amazon.
I took Missy back home, got my grocery list together and then headed out to shop about 2 hours later. The poor “thing” was still on it’s back. I did feel sorry the thing and decided to flip it over and snap a few pictures. If I had a quarter or something you could see a size relation to this monster beetle.
I can attest to the fact that they can grow over 2 inches long. This one sure was!! It was rather creepy and interesting all at the same time. I just thought I’d share this little educational snippet with y’all.

And along the same lines, I usually am a positive person. There’s very rarely an occasion where I just can’t find something positive about a situation. Now, that’s not the same with people… LOL
Um…Wow. I have no idea! I’m not one to just go off and do something crazy. If I had unlimited amounts of money I probably would just hop on a plane to wherever and see what happens.
This recipe is pretty simple. I love those.
Trim and cut beef into bite sized pieces. Arrange onions in the bottom of a slow cooker liner coated with cooking spray. Top with beef and carrots.
Sprinkle with the Berbere seasoning.
Combine the beef broth and peanut butter in a small mixing bowl. Pour mixture over the beef and vegetables. Cook on low 8 to 10 hours. Turn to high 30 minutes before serving. Combine the water and cornstarch in a small mixing bowl. Add to stew mixture and simmer until thickened; approximately 30 minutes.

- 1 1/2 pounds beef stew meat
- 2 cups onion, chopped
- 2 cups carrots, chopped
- 2 tablespoons Berbere seasoning
- 3 cups low fat beef broth
- 1/2 cup peanut butter, creamy
- 3 cups brown rice, cooked
- 1/2 cup water
- 3 tablespoons cornstarch
Instructions
- Trim and cut beef into bite sized pieces. Arrange onions in the bottom of a slow cooker liner coated with cooking spray. Top with beef and carrots.
- Sprinkle with the Berbere seasoning.
- Combine the beef broth and peanut butter in a small mixing bowl.
- Pour mixture over the beef and vegetables. Cook on low 8 to 10 hours.
- Turn to high 30 minutes before serving. Combine the water and cornstarch in a small mixing bowl. Add to stew mixture and simmer until thickened; approximately 30 minutes.
- Serve over rice with naan.
We get way too many beetles here in the summer. They come in the house, which drives me crazy 🙂 Stews are so great, especially in the fall and winter. I'll have to keep this in mind!
