Bacon Wrapped Scallops with Spicy Mayo

Even though we’re rather close to water, we don’t get fresh scallops on this area. I’d have to drive to DC to get them. That being said, the guy at Giant told us that this particular pack of frozen sea scallops would be better than the “fresh” ones that were in their seafood case. They were. I was quite surprised!! We thawed them IN THE BAG in cold water for about an hour and then put them in the fridge to thaw the rest of the way. They did taste MUCH better than those we’ve had in the case. I was amazed!
These were fabulous!! Then again, bacon wrapped scallops usually are. The sauce was interesting. We used a Thai based chili sauce that was slightly sweet. It wasn’t very spicy and you’d probably need to add either some more red pepper flakes or find a hotter chili sauce for the sauce. It was still very good to serve with the scallops. They disappeared quickly!!
