This is a horrible picture...sorry. Back from visiting Mom this weekend. The whole thing I surreal. I don't think it's hit me yet. I KNOW it hasn't hit me yet. Come this time next month, my mother will no longer be on the mainland and will have retired to Maui. Yes. It's surreal. I will no longer be able to hop in my car and visit her. It will take MONTHS and MONTHS of planning to fly to visit her. It's surreal. We … [Read more...]
Chipotle Chicken Burgers
Friday was day 2 of feeling like crap. I still have no idea how in the world I got sick or who I came into contact with that gave this crud away so freely. I'd LOVE to thank them. *sigh* Thursday night I was up three times in 8 hours. The last being 3 am. This isn't going to work. I'm not going to be a functioning adult in the morning and there is NO WAY I will be able to work having such little sleep. So. Yup. I called out. … [Read more...]
Turkey Meatball Subs
I was not a fan of meatball subs. I'm not exactly sure why...well that's not entirely true. I remember my parents trying to feed me one when I was a kid and I just wasn't having any of it. It just didn't taste right. I don't know. I just didn't want it? *shrugs* I think at some point I did toss some cookies but my memory has always been short lived. It doesn't really surprise me. I wasn't a very adventurous eater when I was a kid. I know. Surprising. But, kudos to my parents for … [Read more...]
Chipotle Sloppy Joes
Chipotle Sloppy Joes recipe Cooking Light, April 2009 O M G these were FABULOUS! Since you only use one chili out of the can, you can make several batches of these. I put the rest of the chilis in the freezer for later use. One wasn't too spicy at first, but heated up for lunch today they were sort of spicy, so watch out for that if you intend to have these as left overs. They were super easy to make and MUCH better than regular sloppy joes. I may just retire that recipe and use this one … [Read more...]
Mini Turkey Burgers with Gorgonzola
Mini Turkey Burgers with Gorgonzola Cooking Light, NOVEMBER 2006 These were pretty good!! The gorgonzola melted out of some of the burgers though. I tried to use the smallest of the crumbles knowing that would happen. We put them on Martin's new whole wheat potato rolls. Man those things are yummy! I would make sure the pan is good and hot before you start frying them, though. The first batch pretty much braised in their own juices. I added garlic salt to the mix, too, to give them a little … [Read more...]
Sloppy Joes
Sloppy Joes Cooking Light, JANUARY 2004 YUM! That's all I can say about this recipe. These were YUM-MY! The sauce was just sweet and tart enough, the veggies made it healthy, and we used the newly found whole wheat potato rolls. It made for a DELISH lunch the next day, too. DEFINITELY on the make again list!! Knife Cutting board Measuring cups and spoons Non-stick skillet Wooden spoon … [Read more...]
