Celebrating Cinco de Mayo the AKHA Way!

Monday is Cinco de Mayo! It’s not usually something we celebrate in the AKHA household. Granted, we have tequila. I may whip up a margarita or two. Just have to see how I feel after our trip this weekend. We’re going to Rickett’s Glen. It boasts 22 waterfalls in their short, 3.2m hiking loop. Granted it’s like 1100 feet down then 1100 feet up. Ever 1000 feet is like a mile? So it’s really 6 miles? Something like that.

Anyway.

We have always made meals from south of the border in our house. Even as I was growing up we’d make enchiladas, fajitas, tamales, nachos, and lots of taco salads!! Man how I love me a good taco salad.

We didn’t celebrate Cinco de Mayo when we were growing up, either. We had St. Patrick’s Day, Easter, Derby Day, Fourth of July, Thanksgiving, and Christmas for our food holidays. Cinco de Mayo wasn’t really in the picture. We just ate Mexican food anytime. I guess I was a bit spoiled that way.

Flank steak used to be really cheap when I was growing up. It was a real treat to have Dad marinate a flank steak, fire up the grill or the broiler, and whip up a batch of fajitas. Man! That was some tasty dinners! Since I can’t grill and flank steak is horrible expensive, I whipped up some stir-fry which is like a steak fajita bowl.

Since we’ve been having #MeatlessMondays, I’ve integrated some of South American style foods into our meat free meals. I’ve stuffed peppers with delicious quinoa, made some tasty bean and rice enchiladas and whipped up some rather tasty Portobello tacos. Cinco de Mayo doesn’t have to be about meat all the time!

I’ve put together eight of my favorite South American style meals. I’ve even thrown in a dessert or two. I hope you have a great Cinco de Mayo and hope you try some of my recipes for your celebration!

Last but not least, you can’t forget dessert! Take these tangy, tasty Tequila Sunrise Cupcakes. The orange and cherry flavored cakes are topped with a delicious tequila buttercream. Cupcakes are not just for kids any more!

So, whip up some margaritas, grind up some guacamole, and bon provecho!

  1. I love Tex mex but you really threw me with the banana burritos and arepas de queso. They're both new to me and I can't wait to give them a try! YUM!
    The waterfalls sound great too!
