3 ounces dipping chocolate
1 1/2 teaspoons chai spice (or 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/4 teaspoon ground allspice, 1/8 teaspoon ground cloves, 1/8 teaspoon ground cardamom)
1/8 teaspoon olive oil
8 ounces dried apricots
1/3 cup chopped salted roasted pistachios

Letโs Make these Crunchy Pistachio Chai Chocolate Apricots
Coarsely chop the pistachios and set them in a shallow dish. Arrange the apricots on a parchment lined baking sheet.
Melt the chocolate by putting it in a microwave safe container. Microwave on high for 30 seconds. Stir the chocolate and itโs still not melted, continue to microwave at 30 second intervals until itโs completely melted. Stir in the chai spice (or spices noted above) and the olive oil.
Carefully dip the end of an apricot into the chocolate. Allow for any excess to drop off before dipping it into the chopped pistachios. Place the apricot on the parchment and repeat with the remaining apricots, chocolate and pistachios.

I donโt know why, but when I think of apricots itโs always cardamom and usually pistachios. Iโm not sure why I associate those flavors with that region, but I do. Ingredients
- 3 ounces dipping chocolate
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground cardamom
- 1/8 teaspoon olive oil
- 8 ounces dried apricots
- 1/3 cup chopped pistachios
Instructions
- Place the chocolate in a microwave safe container and heat on high for 30 seconds then stir. If the chocolate still hasn't melted completely, heat at 15 second intervals until completely melted. Once melted, add the spices ane olive oil and stir until blended.
- Place the pistachios in a shallow dish for dipping and set aside.
- Carefully dip half of the apricot in the chocolate, allowing the excess to drip off before dipping them into the pistachios. Place the apricots on a parchment lined baking sheet and allow to cool before serving.
