Since I couldn’t find the skewers, we didn’t make kabobs with the chicken and zucchini. We just grilled the breasts normally. Usually, when there’s lemon in the marinade, I don’t usually taste it. For some reason this time I could taste the lemon, but not the oregano. Next time I think I’ll add more oregano to the marinade.
This was really good!! It could have used some pita bread or other flat bread to round out the meal. We’ll probably make this again when I find the skewers. *snort* We served this with a Greek vegetable salad. I’m trying to cut back on our carb intake.
