As I was brainstorming of what to make with the delicious Perdue Signature Chicken Stock, I thought of this recipe. Why didn’t I make it? Well, because I wanted to make something just a little different. So, I went with the Creamy Chicken Pasta with Leeks and Shallots. If I had made this recipe, the delicious flavor of the chicken stock would not be as prominent as I really wanted it to be.
How’s THAT for an answer for ya?
I have a new found obsession with mushrooms. I didn’t really like them when I was growing up and I still don’t like many of them raw. So, mushrooms in a salad are a no go for me. But cooked? Now, that’s a game changer right there!!
I will eat ANY type of fungi if it’s cooked. It changes the flavor immensely and no longer tastes like s –what mushrooms are grown in. LOL
I also love going to Whole Foods and looking at all the different types of fresh mushrooms they have there. It always inspires me to make a dish like this. I mean, with all those flavors, textures, and colors of mushrooms it’s difficult for me to stay away from the kitchen to create deliciously simple and tasty dishes like this one.
And yes, I did forget to bring a plate, but I thought it would make for an interesting photograph (granted not all that conventional) to show you what my lunch looked like the next day.
Yes. It DID look like this! This is why I LOVE taking my left overs for lunch. Then I get co-workers wandering the office to find out where that delicious aroma is emanating from. Usually, MY OFFICE!
Just look at all that mushroom goodness!! I know. It’s not nice to post something like this SO many hours before lunch or even dinner for that matter, but I must. Sorry dear readers. It’s torture for ME to have to eat it and wait until I can post about.
And yes. I want to make this again because I am trying desperate NOT to lick my screen.
That creamy goodness, the tender chicken all on top of fabulously rich mashed potatoes. Who goes out for lunch when they can eat THIS at work? I know *I* don’t!
Chicken with Wild Mushrooms
Chicken with Wild Mushrooms sounds difficult, but it’s really simple and quick. You can make this Chicken with Wild Mushrooms on the busiest of weeknights.
Ingredients
- 1 pound chicken breast, trimmed of any additional fat
- 1 cup thinly sliced onions
- 3 cups mixed mushrooms, chopped
- 1/2 cup fat free half and half
- 1 cup fat free chicken stock
- 1 tablespoon flour
- 2 tablespoons chopped, fresh thyme
- 2 teaspoons chopped, fresh rosemary
- 2 ounces fat free cream cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet coated with cooking spray over medium-high heat.
- Add the onions and sauté 2 to 3 minutes.
- Add the mushrooms and sauté until they release their juices and begin to brown, about 5 minutes.
- Place the vegetables in a bowl and keep warm.
- Spray the skillet with cooking spray and return it to the burner.
- Add the chicken and cook 3 to 5 minutes or each side or until almost cooked through. Remove from heat and keep warm.
- Combine the half and half, chicken stock, and flour in a small bowl with a whisk.
- Return the skillet to the burner and reduce heat to medium. Pour the cream mixture into the pan stirring constantly with a whisk until the mixture begins to thicken.
- Add the cream cheese using the whisk to break it apart and help it melt into the broth mixture.
- Once the cream cheese has melted, return the mushrooms and chicken to the pan and simmer until heated and the chicken is cooked through.
- Serve with mashed potatoes, rice, or noodles.
