Chorizo and Egg Breakfast Tacos
Chorizo and Egg Breakfast Tacos have such delicious flavor! From the slightly spicy chorizo to the fresh chimichurri these tacos have so much flavor.
A while ago, I received from wagyu from Vermont Wagyu. Yes, this recipe is that old. When they first contacted me, I knew a burger was in order. I wanted to highlight the flavor and moistness of the wagyu beef. To me, with ground wagyu that’s the best way to make it the start of the show.
Of course, I topped that burger with some of this chorizo and mushrooms. And oh my goodness it was oh so delicious!! That rich flavor of the wagyu beef coming through with the smoky grilled flavor. I’m totally drooling over that chorizo mushroom wagyu burger.
They also sent me enough chorizo to make another recipe. Another sandwich in fact. One that’s famous with chorizo. Choripán! It’s now a street food but back in the day, it was for gauchos to eat while working. Choripán is a simple sandwich with amazing flavors. Perfect for the Vermont Wagyu chorizo.
Even after both of those recipes, I had just enough chorizo for these chorizo and egg breakfast tacos! Because you don’t need a whole lot of chorizo. It has so much flavor that it doesn’t take a whole lot. Especially in these tacos. I had one final link left which was the perfect amount for these breakfast tacos.

What are breakfast tacos?
I feel like this is sort of self-explanatory. It’s breakfast on a taco. That could mean anything from bacon and eggs to sausage breakfast tacos or even bananas and syrup in pancake tacos. I feel like anything goes as far as tacos goes and that includes pancake tacos.
I don’t think breakfast tacos are a Latin creation. Well, I think tacos are but not like we think of them today. And while Austin claims to be the invention or creation of the phrase breakfast taco, it’s really not. I tell you. Tex-Mex cuisine is just riddled with rivalries almost as bad the Hatfields and the McCoys. Cities despise cities and everyone steals recipes and names from San Antonio, apparently. I’m not going to get in all that nonsense. I just want everyone to know that breakfast tacos are from San Antonio.
What are some breakfast taco toppings?
You could totally do a breakfast taco bar! Or a breakfast taco board. Filled with all the fun toppings for a delicious breakfast taco. And this would be a great brunch idea. The board or the bar. It depends on the number or people you’re having for brunch. If it’s more than 10 I’d say it’s a bar. But less than that it could just be a board.
There’s the obvious flour and corn tortillas. Always have both available. Then the toppings could be eggs scrambled, maybe some chopped fried eggs, or even some hard-boiled eggs. Choices of meat could be sausage and bacon. There could be chorizo, like these chorizo and egg breakfast tacos. Or even some carne asada or pollo guisado.
There could be some veggies like onions and tomatoes, some chopped avocadoes. Maybe some grilled street corn. Sauces like salsa, pico de gallo, and even guacamole would be delicious. Refried beans! Those could be a delicious addition to a breakfast taco. They could be pinto or even black beans. Potatoes! Patatas bravas or just some simple home fries are perfect. I’m a friend of the tater tot or even fries. I had a great breakfast burrito that had fries on there.
Then there’s the choice of cheeses. I have queso fresco on these tacos, but Cheddar and even a Monterey Jack or Colby would be great, too. Then there’s additional toppings like a lime crema. Maybe some chimichurri. Or even just a simple hot sauce.
Then garnishes like chopped cilantro or green onions would be great. For those that don’t like cilantro maybe some parsley or even a sprinkling of a taco seasoning mix. Some lime wedges are a great idea, too. They brighten up any and all taco flavors.
What do chorizo and egg breakfast tacos taste like?
Oh so good!! I toasted the flour tortillas on a stove burner. I have a gas range and it adds that nice little char around the edges. Next, I put a couple of strips of roasted red pepper on the bottom of mine. Then I spooned some of the soft scrambled eggs on top. Crispy chorizo came next. I mean, just look at those crispy sausage pieces!
A drizzle of the chimichurri went on top. It brings a bright and fresh taste to the rich chorizo and eggs. I sprinkled some queso fresco on top of everything. And, for some more color and flavor, I garnished everything with thinly sliced green onions. Finally, I drizzled mine with a lime wedge. I know it sounds weird with the eggs, but it rounds out all the flavors.
They are perfectly scrumptious for a quick breakfast. And a unique and delicious additional to any brunch menu. The chorizo is not too spicy. It has a delicious smoky and rich flavor. Some of them can be quite spicy so be sure to purchase one that matches your taste.
I like the softly scrambled eggs on these tacos. It makes them creamy and delicious. But I’ve also made them with fried eggs on the bottom. Those are just as yummy! Especially if you fry the eggs after frying up the chorizo. The added flavor and fat from the wagyu chorizo makes a fried even more delicious for these tacos. Of course, you could do the same with the scrambled eggs.
Queso fresco is the perfect cheese for these delicious chorizo and egg breakfast tacos. But a nice cheddar would be great, too. And you could broil them a little to melt the cheese. Cotija is another cheese that would great on these breakfast tacos. Oaxaca is one of my favorite Mexican cheeses. It would be great on these tacos, too.
The chimichurri is bright and fresh. A drizzle of lime juice really enhances its flavors. But a drizzle of crema would add some richness and flavor that would be delicious, too. Or a lime crema! There ya go. The best of both worlds. Either way you top them, these chorizo and egg breakfast tacos are simply delicious.

Chorizo and Egg Breakfast Tacos
Chorizo and Egg Breakfast Tacos have such delicious flavor, your guests will devour them! From the smoky and slightly spicy chorizo to the fresh chimichurri and then sharp queso fresco. They’re packed with flavor.
Ingredients
- 2 tablespoons fresh oregano
- 2 tablespoons fresh parsley
- 1 tablespoon olive oil
- 1 tablespoon sliced green onions
- 1 teaspoon fresh thyme
- 2 teaspoons fresh lime juice
- 1 teaspoon red wine vinegar
- 1/2 teaspoon chopped garlic (1 small clove)
- 4 ounces smoked chorizo sausage
- 2 tablespoons butter
- 2 large eggs lightly scrambled
- 4 corn tortillas
- 1/4 cup crumbled queso fresco
Instructions
- Combine the first 8 ingredients in a small food processor and process until smooth but stop before the mixture becomes a paste.
- It should still have some larger pieces of herbs. Set aside
- Heat a nonstick skillet over medium high heat.
- Add the chorizo and sauté until crispy and browned. Remove to a paper towel and keep warm.
- Add 2 tablespoons of butter to the pan and swirl until melted.
- Add the lightly scrambled eggs and cook, stirring occasionally, until cooked to your liking. I like mine just a little soft.
- Heat the corn tortillas. I toast mine on the stove using a gas burner. You can toast yours in the oven or in a skillet. Just don’t heat them in the microwave. The corn tortillas do not heat well in the microwave.
- Place 2 tortillas on each of 2 plates. Top with chorizo and egg.
- Drizzle with the chimichurri.
- Garnish with the queso fresco before serving.
