I don’t know about you, but I’m loving all of these pumpkin recipes for #PumpkinWeek.  There’s such a wide variety, too!  Bars, breads, cookies, soups, pastas, and cakes!  How can you go wrong with all this pumpkin??

I’d like to thank Terri from Love and Confections for coordinating this event.  I know how difficult it is getting all the bloggers coordinated and the code sent out.  Definitely NOT and easy task and I’d like to thank her for inviting me this week long celebration of pumpkin!

I think, but the time Thanksgiving is past, and maybe Christmas, I will probably be tired of pumpkin and all it has to offer.  I know my Bloglovin was blowing up with all the pumpkin recipes.

 
But for now, I’m loving this tasty and interesting take on hummus.

Confession.

 
I hated chickpeas growing up.  Honestly.  If they were in my salad, I’d shove them Dad’s way.  He loved them.  Then, I was introduced to Perfect Pita’s roasted red pepper hummus and the world as I knew it changed.  I could eat my weight in their hummus.  One of these days, I will create it and eat my weight in it.  KIDDING!  or am I…..?

But enough about that.  This hummus.  This one right here is fabulous!!  It has the delicious flavor of the chickpeas combined with the slightly sweet flavor of the pumpkin all mingling with some curry spices.  It’s a serious party in your mouth.
 
 
I’ve seen many different types of pumpkin hummus.  Some of them go the sweet route and then others the more savory route.  For me, pumpkin and curry just GO together.  Like salt and pepper, peanut butter and chocolate, pancakes and syrup.  The pumpkin has that delicate flavor that totally encompasses the curry spices and rounds out the flavors completely.

And then add some pita chips.  Or shall I say crack chips.  Is it just me or do you have issues resisting the urge to eat the entire bag once you’ve opened it?  No?  Just me?  *shrugs*

Curried Pumpkin Hummus
Yield: 20 servings

Curried Pumpkin Hummus

Cook Time: 5 minutes
Total Time: 5 minutes

Ingredients

  • 15 ounces chickpeas, rinsed and drained
  • 1 cup pumpkin puree
  • 2 tablespoons coconut milk
  • 2 teaspoons curry powder
  • 1 teaspoon garam masala
  • 1/4 teaspoon salt

Instructions

  1. Combine all ingredients in the bowl of a food processor and process until smooth. Add more coconut milk as needed to create a smooth texture.
  2. Serve with pita chips, vegetables, or naan.

  1. Drool… that looks WONDERFUL!! So many good flavors right there. I could just snack on that all day I think – will definitely have to save this one to try soon! I think it would be a yummy spread on a sandwich too!

  3. IDK if any child loved chick peas growing up. But I too recently discovered the deliciousness of pumpkin in hummus. Love the curry flavor you added!
