Double Decker Brunch Burger
Double Decker Brunch Burger is just that. Brunch on a bun. It starts with two smashed patties topped with cheese. The top layer has a fried egg and bacon and there’s a waffle in the middle making it an epic double decker burger.
I have been a total slacker this month for #BurgerMonth2021. It’s just been a not so great couple of months. Not that I haven’t made and eaten my burgers. I just haven’t gotten around to editing the photos and posting them on the blog. Oh, and writing the posts.
To say I’ve lost my mojo is an understatement. And I don’t even think it’s because of this lovely pandemic we’re still going through. I think it’s just life in general for me. I’ve hit a rough patch and having a hard time getting over it.
Burger month was supposed to get me out of the rut, but it hasn’t really. Not that I haven’t gotten creative in the kitchen again this year for my burgers. It’s actually getting the post written and published that seems to be my hiccup. I know I’ll get over it eventually. Things just need to be shaken up a bit to get it done. Okay, so enough about me.
What is a brunch burger?
I mean besides the obvious, it’s a burger that you can have for brunch. There’s a waffle in the middle. Then there’s bacon and egg on top. And finally burger patties on both top and bottom buns. Exactly what I said, it’s brunch on a bun.
When I thought about burgers for this year, I remember a trip to San Francisco. There was Johnny Rockets restaurant near the hotel. We had breakfast there almost every day and I had the breakfast with a burger patty on the platter. I can’t remember what it was called, but it was good. So, that got me thinking of a breakfast burger.
I’ve already made a hash burger. It was last year when I made the corned beef hash burger. Then I made an authentic loco moco Hawaiian burger based on loco moco I had for breakfast in Maui. So you could have that for a breakfast burger, too.

So there’s the top bun. It’s a brioche style bun slightly toasted on the griddle. Then a fried egg. I always make mine well done. I don’t like a runny yolk. Make your egg how you want it. Next is a layer of bacon on top of the smashed cheeseburger patty. And then there’s a waffle. Then more bacon and a second smashburger patty on top of the bottom bun that’s also toasted.
I made my waffles from a Krusteaz protein pancake mix. It’s the same mix I used for my hot chicken and pancake tacos. Feel free to use whatever waffle you want in the middle. Ego? Have at it. Something healthy like a whole grain? Go for it! It’s your burger. Use whatever waffle you want. Or make it a pancake! Or an English muffin or crumpet. Go crazy!
Don’t like bacon? Change it up!
I used some center cut bacon. No, it wasn’t apple wood smoked. Though that would have been good, too. It was just regular bacon. If you’re not a fan of bacon make it Canadian bacon or a slice of ham. Maybe a sausage patty? Or sliced sausage links. That would be good, too.
Full disclosure.
I meant to mix the ground beef with breakfast sausage. For whatever reason, the sausage never made it to the online cart, and I didn’t get it in time to make the burger. Which is okay. But if you want to really make this more breakfast like, combine some breakfast sausage with your ground beef. I bet it tastes awesome.
And I will more than likely do that next time I make these. Because I am making these again. These double decker brunch burgers were off the charts delicious. It was essentially most if not all the protein and calories I needed for the day. Perfect for brunch, right?

Double Decker Brunch Burger
Double Decker Brunch Burger is just that. Brunch on a bun. It starts with two smashed patties topped with cheese. The top layer has a fried egg and bacon and there’s a waffle in the middle making it an epic double decker burger.
Ingredients
- 8 ounces ground beef
- 4 slices cheddar cheese
- 6 slices crisp cooked bacon
- 2 large eggs
- 2 waffles
- 2 hamburger buns
Instructions
- Divide the ground beef into 4 balls.
- Preheat a griddle pan to medium-high heat.
- Using a flat spatula and a potato masher (or whatever else you have to help press the spatula down) press the burgers onto the griddle pan.
- Cook 2 to 3 minutes, turn the burgers over, top with cheese, and cook an additional 2 to 3 minutes or until cooked to your liking.
- Place one patty on the bottom bun, top with 1 1/2 slices of bacon.
- Top with a waffle, the second patty, 1 1/2 slices of bacon and the egg.
- Place the bun on top and enjoy!
