Easy Freezer Breakfast Burritos Are Great on the Go Meals
Easy Freezer Breakfast Burritos whip up in no time, are hearty and filling, and you can easily change up the ingredients to match your taste. They’re a perfect grab and go breakfast for work!
I am a total breakfast person. I think I love breakfast more than any other meal of the day. There’s such a range of delicious foods and eggs. I love eggs! They’re delicious scrambled, fried, and boiled. This combined with my desire to eat all the things in a tortilla makes for some easy freezer breakfast burritos!
March is frozen food month. Just in case you didn’t know. We freeze a lot of things, and we eat a lot of frozen fruits and veggies. Mostly veggies though. Except for that brief stint where I felt like drinking a smoothie was the way to go for breakfast. And it was okay for a while, but then I felt the need to actually eat breakfast. Which is when I started making these burritos.
Prior to the smoothie I was making homemade version of those just crack an egg bowls. Those are so easy to make at home. And they’re so much cheaper than the ones you purchase in the store. Just like these easy freezer breakfast burritos. So much cheaper to make at home.
How do you make easy freezer breakfast burritos?
There’s just a little prep work you need to do. The eggs need to be cooked and the peppers and onions need to be heated and strained. You don’t want to have the peppers and onions to be all wet. That just makes for a messy burrito. That’s never any fun.
For me, the hardest part of the burrito is wrapping it up! If you don’t wrap it tightly, all the cheese and salsa will just ooze out when you eat it. I had one or two do that since I started making these easy freezer breakfast burritos. It’s important to really keep the sides tucked in as you roll them up. Sometimes it’s not easy to do if you’ve put a little too many ingredients on the burrito. Less is best where these are concerned.
I love the tater tots in these burritos, but you could add in cooked hash browns or even some home fries. Heck, even some fries in there would be good, too. I had a burrito for brunch at a local restaurant that had fries in there. And they were so good in the breakfast burrito! But if you don’t want potatoes maybe try some black beans or refried beans. That would be good!
Swap out the turkey sausage for ham, bacon, or even chorizo. Try some roasted red peppers or even sundried tomatoes. I would make sure everything is drained well because you don’t want these to get soggy when they heat up. I’m thinking of a sun-dried tomato with spinach and mozzarella or even some artichoke hearts and Parmesan. There are so many options to choose from with these easy freezer breakfast burritos. And, in all honestly, this one has corned beef, Swiss, and some cabbage. All leftover from St. Patrick’s Day.
I wrap mine in parchment and foil. The parchment provides an extra layer of protection from freezer flavors. And it also gives you options when you are read to heat them up. There’s a trick to making sure the burrito doesn’t get all crispy and hard when you microwave them.
And not the crispy you get when you bake them. That’s a good kind of crispy. Microwave crispy isn’t the good kind of crispy. I see some of you shaking your head. You know what I’m talking about.
How do you reheat easy freezer breakfast burritos?
For me, since I take them to work, I have one option. The microwave. By the time I get to work, the burrito is mostly thawed. I take it out of the foil but leave it in the parchment. Then wrap it in a kitchen towel I brought to work. I microwave it for 90 seconds and let it sit in the towel for at least a minute or two. The towel keeps the burrito wrapper moist and prevents it from drying out and getting hard.
If we had a toaster oven at work, I’d set it to 350 and pop the burrito, foil and all, in the toaster oven for 10 to 12 minutes. When I’m home from work or I telework that day, I put the easy freezer breakfast burrito wrapped in foil in air fryer at 375 F for 12 to 14 minutes. I like the air fryer the best because it gets a little crispy on the outside when it cooks. You could do the same in the oven if you wanted to cook up a large batch for a sleepover or a brunch.
These will last at least a month in the freezer if they’re wrapped tightly. However, I don’t think they will last that long. They’re great to pop in your bag to take to work. If your commute is like mine, it will be mostly thawed by the time you get to work. That makes for a slightly shorter cooking time. Which is always good when you’re hungry at work.
What do easy freezer breakfast burritos taste like?
So good!! I love them for breakfast at work. And for breakfast at home. When the hubs works the closing shift, I totally pop one in the air fryer to have for breakfast while I wait for him to get up. They’re convenient and packed with flavor. And since you just cook the eggs through, they’re not all dry and rubbery when you reheat these easy freezer breakfast burritos.
I like the turkey sausage links. They’re easy to cut in half and place on the burrito. Or you could get the crumbles and use those. They’re a little sausage goodness in these breakfast burritos. I might make some bacon ones next. Bacon can easily be cooked in the microwave. Or I’ll pop some on a pan and cook it in the oven. Deli meat would be good, too. But I’d look for low-sodium meats.
Then there’s the melty cheese and salsa! They sort of combine to make this deliciously spicy sauce with the eggs, veggies, and sausage. The salsa is a spicy little kick I love in these. But I’m also thinking about some pizza sauce and pepperoni with Mozzarella. That would be good, too. Pizza breakfast burritos! Yes!
You see? I’m still thinking of more variations for these easy freezer breakfast burritos. Once you get the wrapping and reheating down, there’s endless possibilities of flavor combinations. You could even skip the egg and try some tempe or tofu in there. Or just some straight up beans for protein. I could go one forever with the combinations for breakfast burritos.

Ingredients
- 5 eggs lightly scrambled
- 1 tablespoon butter
- 20 cooked tater tots
- 5 turkey sausage links sliced in half
- 1 cup frozen peppers and onions
- 1 1/2 cups shredded cheddar cheese
- 1/3 cup green chile salsa
- 5 large burrito wrappers
Instructions
- Heat a non-stick skillet over medium-high heat and add the butter to melt.
Add the eggs and stir with a spatula until they are just cooked through. Place the eggs in a bowl and set them aside. - Place the peppers and onion in a microwave safe bowl and heat on high for 5 minutes. Strain them using a fine mesh strainer making sure to press the vegetables to remove excess liquid. Put the vegetables back in the bowl and set them aside.
- Wrap the burrito wrappers in a clean towel and microwave on high for 2 minutes.
- Prep 5 sheets of parchment paper and 5 pieces of aluminum foil to wrap your burritos.
- Place a burrito wrapper on your work surface. Place 4 tater tots down the center of the burrito and put the turkey sausage halves next to them. Spoon some peppers and onions on top of the tater tots and sprinkle with cheese. Place the eggs on top and spoon a little salsa over them.
- Fold in the sides of the wrapper and then roll up from the bottom as tight as you can. Wrap the burrito in parchment paper and then aluminum foil. Place in a freezer bag and repeat with the remaining wrappers and ingredients.
- Place the bag in the freezer.
To reheat:
- Microwave: Remove the burrito from the aluminum foil but keep the parchment paper on. Wrap the burrito in a damp paper towel or clean linen towel. Heat on high 1 1/2 to 2 minutes or until heated through. Let the burrito rest in the towel for 1 minute before eating.
- Oven or air fryer: Preheat to 350 and cook the burrito, still wrapped, in the oven for 12 to 15 minutes or until heated through. Allow it to cool for 2 to 3 minutes before eating. Alternatively, you can unwrap the burrito before cooking for a crisper outside.
