Gingerbread People Cookies

These were really yummy!! Gingerbread cookies are one of my weaknesses so I usually bake them and take them to work because if I leave them at home, I’ll just eat them all.
I’m not a huge fan of royal icing and making those types of decorations on cookies. I have the silver and gold balls (and an array of colored sugars) but I really didn’t feel like decorating cookies last night. Everyone at work loved them and half of the batch are gone already.
Stand mixer (or hand mixer)
Measuring cups and spoons
Large mixing bowl
Silpat (or parchment paper)
Cookie racks (or counter top to cool the cookies)
