Gingerbread Waffles
Gingerbread Waffles have all the gingerbread flavor in a delicious and easy waffle form. The spices are warming and delicious and the waffles whip up in minutes. Perfect for a holiday brunch.
I cannot show my love for gingerbread enough. Seriously. I love all the gingerbread things and think that pumpkin spice is just a gingerbread spice wanna be. Gingerbread cookies top my list of all cookies. If they had a gingerbread latte, I would totally have one every day. I might have to sprinkle gingerbread spice on my oatmeal, in my coffee, and maybe in my smoothie. Don’t judge.
What are your holiday traditions?
I figured since I talked about gingerbread spice plenty in the past month and I already talked about waffles in multiple posts, I’d talk about the holidays. I’m thinking these waffles will be a new tradition for the holidays. Some families make Christmas pancakes. But when I was growing up, breakfast was always a quiche. And I love that it was quiche.
We would get up early. Thanks to my sister. She always woke me up to go downstairs and check out the presents. We were allowed to open the stocking gifts, but everything else had to wait. Unless it was a “Santa” present that wasn’t wrapped. Then it was a free for all.
We had to wait until Dad put the quiche together. It seemed like FOREVER! He had to chop the ham and grate the cheese. Then there was the custard that needed cooking before pouring it all over the ingredients in the pie shell. Man, I loved that breakfast. And I tried to carry on that tradition in our house, but sometimes I’m not just that prepared.
While Dad made the quiche, we divvied up the presents. For the most part everyone took a turn so we could see what everyone received as a gift. But there were always more presents for us girls than Mom and Dad. And Mom made sure there was an even amount between us girls. I try to do that now, but it’s not so easy. Sometimes Mom sends one more than I anticipate, and it throws my count off.
One of the most interesting traditions revolved around divvying up the presents. When we got older, there always seemed to be a particular photograph when retrieving presents. Especially those in the back of the tree. Meaning, we had to crawl under the tree on our stomachs to get those in the back. Yes. You guessed it. There was a tradition of a butt shot of someone getting presents from the back of the tree. It’s a weird tradition, but a funny one.
What traditional food do you have for Christmas?
Yes. I know not everyone celebrates Christmas. But what food does your family eat for whatever holiday you celebrate? I mean those outside of Thanksgiving. I feel like almost everyone has turkey for Thanksgiving. Even though some don’t really like turkey they eat it anyway because that’s what you have for Thanksgiving. Maybe one of your traditions is to have a chocolate crepe cake. Or maybe you serve up some mango lassi.
For Christmas we typically had a turkey and sometimes a ham. That depended on how many people we were having for dinner that year. You see, one of our traditions was having the “orphans” for dinner. Those people that didn’t have family in the area and couldn’t travel home for the holidays. We had those people come to our house for dinner. And it made for some of the most interesting and fun holidays.
The table was always full of people. Sometimes we had the card table set up in the living room to accommodate the overflow of people. And then there was that one year some were sitting in bar stools around of the outside of the table to eat and participate in the conversation for the evening.
And those topics had such a range. But we had one rule and what was no politics, sex, or religion. Those topics were buzz killers for the evening. And most are so opinionated about those topics that it’s just not very festive to talk about them at the dinner table. Any dinner table for that matter.
The dessert table was always full of pecan or Derby pie, pumpkin pie, and a a steamed pudding with cherry sauce. But I think I’m going to try this brandy alexander with ice cream this year. Maybe I’ll make a new tradition for my family!
What do Gingerbread Waffles taste like?

They taste like a new tradition. If not for a holiday breakfast, then for me to have at work during the holidays. The hubs is just not a sweet eater for breakfast so I struggle with waffles and pancakes. I like to eat them for breakfast. So, for the most part, I usually have those when he’s not home for breakfast. But I’m thinking these Gingerbread Waffles are something he would enjoy. They’re not super sweet and would be perfect for a Christmas breakfast or brunch.
These Gingerbread Waffles are packed with gingerbread flavor. They smell amazing when they’re cooking. I had a difficult time not nibbling on all of them as I was cooking them. The aroma was amazing. They are packed with cinnamon, ginger, cloves, allspice and a myriad of other spices in there. I swear. One of these days I will share my gingerbread spice recipe. Because it is intoxicating. Every time I open the jar, I have to take a huge whiff. Because the aroma is so delicious.
I used buttermilk in these waffles make them light and delicious. The buttermilk adds not only a depth of flavor but interacts with the baking powder and baking soda to make these gingerbread waffles light and airy. They are not dense at all. The waffles have a nice crumb to them. Which means they have a nice airy structure with air pockets in there.
These gingerbread waffles taste like a new tradition. They truly are easy to whip up. I made the batter in under 10 minutes. The batter makes 8 waffles which took about 3 minutes for every pair to cook up. That’s about 12 to 15 minutes for the whole batch to cook up. If you double it that’s still only 30 minutes for 16 waffles. Plenty for holiday friends and family.
And also perfect for a work breakfast. I just wish my new gig had a toaster. Maybe I’ll just have to purchase an inexpensive once for the office. And for me to taste these waffles, bagels, and whatever else I want to have for breakfast.

Gingerbread Waffles
Gingerbread Waffles have all the gingerbread flavor in a delicious and easy waffle form. The spices are warming and delicious and the waffles whip up in minutes. Perfect for a holiday brunch.
Ingredients
- 1 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons gingerbread spice (or 1 teaspoons cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground allspice, 1/4 teaspoon ground cloves)
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 cup buttermilk
- 1/3 cup molasses
- 1/2 teaspoon vanilla extract
- 4 tablespoons melted and cooled butter
Instructions
- Preheat the waffle iron.
- Combine the flour with the baking powder, baking soda, and ginger spice (or spices) in a bowl and stir with a whisk to combine.
- Combine the brown sugar with the eggs and beat until creamy and light.
- Stir in the buttermilk, molasses, vanilla extract, and melted butter.
- Add the dry ingredients to the wet ingredients and stir until combined.
- Cook the waffles according to manufacturers instructions.
- Top with maple syrup, caramel syrup, whipped cream and sprinkles, or just eat them plain with a little butter like I do.
