This week has been okay.  I should say better than most month ends, but it’s not been perfect.  I mean, I still have to make an SOP for this nonsense.  Thank you Obama.  Please…no flaming political comments.  I mean, he’s pretty much the reason I have this stress every month.  It’s not like we’re wasting our money.  We’re 100% reimbursable.  No appropriated funding here…

 

Anyway.

 

Who doesn’t love mac n cheese?  I mean, seriously.  I haven’t met a single person who doesn’t love pasta and cheese.  How can you not??

 

Here’s how this all came about.

 

I had planned on a different dish for the sausage.  I thought it was Italian sausage, but it wound up being bratwurst.  I guess I COULD HAVE just continued with the pasta casserole, but I just didn’t really want to knowing that the sausage was bratwurst.  So.  I changed my plans.  I bought buns, peppers, onions, and cavatappi.  I LOVE cavatappi.  It’s my fave pasta of late.  I mean, it’s long curly elbows essentially.  How can you NOT love it!!

 

And smoked Gouda?  OMG!  Smokey, creamy goodness.  It’s the perfect cheese  for just such a dish.

 

I’ve been playing with the cottage cheese and cream cheese combination since the cheesecake experiment.  It’s a good base for lots of cheesey goodness.  I’m guessing it’s kind of like the cauliflower Alfredo.  A base for your flavors to springboard off of.  I could have gone with a bechcemel sauce, but just didn’t want to go that route that night.  Besides, I like the added cheese flavor the cottage and cream cheeses give the sauce.  A bechemel to me is always a little bland to me no matter how many spices I put in there.  I mean, milk just isn’t cheese, ya know?

We watch Sports Center in the mornings.  There are just a few topics and athletes that are just reported to DEATH!  I’m tired of hearing about them.  Please.  Stop.  LeBron James is culprit one.  Yeah, you’re a great ball player.  Why do we have to spend 3 weeks highlighting how great he is and what he can do with his life and where he’s come from blah blah blah.  It seems this type of reporting occurs at least once every few months.  Please.  Stop.  Get over it.

 

Danica Patrick.  I think it’s great that she’s a “pioneer” in NASCAR for women and that she’s a role model for younger generations.  Yay for you.  To me?  You’re the most snotty, spoiled brat of a drama queen in almost any sport I’ve seen; male or female.  Her name is like fingernails on a chalkboard to me.  She’s one of those kids that if they didn’t get their way, took their ball and went home.  Seriously.  I can just imagine that.

 

Okay.  Rant over.

 

Mom’s coming today.  I really should get up off the couch and get some cleaning done before she gets here and before S decides to say something about it.  I’m on egg shells with him after last night.  It wasn’t purdy.

Grown Up Smoked Gouda Mac and Cheese

Cook Time: 20 minutes
Total Time: 20 minutes

This adult macaroni and cheese is full if smoked Gouda flavor. Grown up Smoked Gouda Mac and Cheese has rich, delicious flavors that your family will love. Even your kids will loved it, too.

Ingredients

  • 16 ounces macaroni
  • 2 cups smoked Gouda, grated
  • 1/2 cup fat free cottage cheese
  • 2 ounces low fat cream cheese (Neufchatel)
  • salt and pepper to taste

Instructions

  1. Cooking pasta according to package directions, omitting salt and fat.
  2. Combine the cottage cheese and cream cheese in the bowl of a food processor. Process until smooth and creamy.
  3. Pour the cottage cheese mixture over the hot, cooked pasta and stir to combine.
  4. Add the Gouda cheese and stir until melted.
