Love Carbonara and such a nice easy recipe! I was in Vermont for an American Cheese Society Conference a number of years ago. The kids and Dad did the usual tours while I was in sessions. But my oldest and I also did a couple cheese tours, including Cabot, if I recall correctly. Lots of good cheese in Vermont and a lovely state!
