If y’all read my blog, and I mean read my blog, you’ll know from this post that it’s been H E hockey sticks casa da AKHA this past week.  Not this week, but last week.  The hubs was dealing with major issues at work to include the Russian embassy.  And you’d think that after handing that incident with STELLAR professionalism even getting compliments from the FBI and local PD that they’d appreciate him more.

Pardon me, but the F-tards that he works with just don’t understand the concept of “contractor.”  They seem to think that he can just hire people to fill the gaps they feel they need.  Um.  Not without written concurrence to agree to PAY for those positions can he do ANYTHING.  He has no budget and he has no authority to spend their money on ANYTHING.

 

Sorry.  I went down the wrong path.  Let me turn around head back to the point I was making.  It was hell.  He was dealing with this international incident and I was just trying NOT to worry myself sick over how this was going to affect his health.  He’s current got a cold by the way.

Now, usually when he’s gone and I’m home I snack myself into oblivion.  Thankfully I had a hobby.  Stalking the internet to see if his video popped up on any of the major news channels.  They didn’t, thank God.  But it was headed that direction.

 

I also had a ton of photos to edit, recipes to write, and posts to compose.  Yeah.  Didn’t get that last one done so much, but I do have some stacked up and I just need to write the witty banter you all have come to love.

Oh, and to make meals like this.  I was hungry.  It was a meal I’d made before and totally loved so I thought I’d make it again.  And I did.  And it was delicious.

 

Anyway, I made this sandwich and it sat on the cutting board a minute while I made the dog’s dinner and when I turned around it looked perfect.  So I took some pictures of it with the new lights I purchased.  Yup.  Put my big girl blogger panties on and bought some lights and reflectors.  Next step, BACKDROPS and backgrounds!  More professional than the taped together ones I made at work.

You didn’t know that I printed those white, red, blue, and brown wood backgrounds at work and taped them all together?  Well, maybe you did, but they really don’t look THAT bad.  Do they?  No.  I don’t want to know.  Honestly.

 

But, see what I mean?  Doesn’t this sandwich just look perfect?  All cheesy, hammy, mushroomy good food.  That and a bag of chips gets you a budget friendly, kid friendly, taste bud friendly meal on the table quick.

Hammy Cheesesteaks

Hammy Cheesesteaks

Yield: 4 servings
Cook Time: 15 minutes
Total Time: 15 minutes

I married a ham and cheese and a cheesesteak together in these Not Your Average Ham and Cheese Sandwich aka Hammy Cheesesteaks; perfect for a take-out fake out meal or any night you’re looking for something quick and easy.

Ingredients

  • 1 cup thinly sliced onions
  • 2 cups sliced mushrooms
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 12 ounces low fat deli sliced ham, chopped
  • 4 ounces reduced fat Swiss cheese
  • 4 hoagie rolls
  • 4 tablespoons fat free mayonnaise
  • 8 thin slices tomato
  • 4 thin slices red onion

Instructions

  1. Heat a large skillet coated with cooking spray over medium-high heat. Sauté the onions 2 to 3 minutes or until they begin to soften. Add the mushrooms to the onions and continue to cook until the mushrooms release their juices.
  2. Add the ham, sprinkle with the garlic powder and Italian seasoning, and cook until the ham is heated through and begins to brown.
  3. While the ham cooks, prepare your rolls. I like mine lightly toasted so I place mine in our toaster oven before spreading with mayonnaise. If you like yours steamed, lightly wrap in a paper towel and microwave on high 10 seconds at a time until warm then spread with mayonnaise or your condiments of choice.
  4. Separate the mixture into four portions and top each portion with one ounce of Swiss cheese. Place the lid on the pan to allow the cheese to melt. Once the cheese has melted and your rolls are ready, carefully lift each portion with a spatula and place on each of the four rolls. Top with tomatoes, onion, and lettuce. Serve with Easy Fries.
