This Hot Brown Pasta Bake will be your new favorite leftovers recipe!  I’ve taken the tasty flavors of my favorite leftover turkey dish, Hot Browns, and turned it into a delicious pasta casserole. Think, mac ‘n cheese with turkey, bacon and tomatoes.

Twas the evening of Christmas, and all through the house,
There were lots of leftovers, especially Brussels sprouts.
The turkey was stored in its reusable container
While Mama looked for places to the store the remainder.

The dishes were piled up high in the sink
And they both knew they wouldn’t be done in a wink.
Mama, draped in towels, while Papa washed dishes
They reminisced about dinner and their holiday wishes.

Mama was mid sentence when she heard suck a racket!
“What could it be?” asked Papa really quiet.
“I thought everyone was in bed,” she replied.
She wasn’t budging until everything was dried.

Papa peered into the dark living room
And spied mid-swipe, a hovering broom!
He couldn’t believe what his eyes were seeing!
He shook his head and starting blinking.

The room was full of cleaning supplies
That had come to life and to his surprise
They were straightening and storing and stashing the gifts
Which were unwrapped and played with by children in shifts.

“What in world is this mystical magic,”
Thought Papa to himself and said, “Mama come quick!”
“What is it NOW?” she said exasperated
But when she looked up from drying she almost fainted!

She saw the brooms and brushes and dust pans galore
Sweeping and dusting and mopping the floor.
When the shock had passed she said to Papa,
“Look, at that! They’re even putting away the china!

While drying tonight I was making secret wishes
That someone would help us with all of these dishes!
About this time, they heard on the roof
What sounded like a sleigh and a clattering hoofs.

Then much to their astonishment and surprise
Neither Mama nor Papa could believe their eyes!
For what they saw through their living room window
Was a big red sleigh flying over the snow.

They ran to the door when they realized what they saw
Then looked up and shouted, “Merry Christmas Santa Clause!”

Even though there’s lots of dishes

Hot browns were almost always served for lunch the day after a large turkey dinner; sometimes for breakfast.  They’re tasty, simple, and delicious!  They can be prepared in less than 30.  So can this Hot Brown Pasta Bake!

This recipe is a leftovers dream!!  I’ve taken some leftover cooked penne, some turkey, and some bacon and tossed them with some canned tomatoes and a simple cheese sauce.  Then it’s in the oven until bubbly, topped with more cheese and baked until browned.  Voila!  Delicious hot brown taste in a hearty pasta casserole.

Not only will this be a family favorite to use up leftovers, but I see this being oh so popular with your pot luck dinners through the holidays!  It’s quick, easy, and inexpensive to make.  Win win!

I've taken the tasty flavors of my favorite leftover turkey dish, Hot Browns, and turned it into a delicious pasta casserole. Think, mac 'n cheese with turkey, bacon and tomatoes. It will be your new favorite leftovers recipe!

Ingredients

  • 2 cups chopped, cooked turkey
  • 14 ounces canned tomatoes, drained
  • 8 ounces cooked, short pasta
  • 1 1/2 cup fat free cheddar cheese
  • 1 cup fat free milk
  • 1 tablespoon flour
  • pinch of nutmeg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon mustard powder
  • 4 slices turkey bacon, cooked and crumbled

Instructions

  1. Preheat oven to 350.
  2. Place chopped turkey, canned tomatoes, and cooked pasta in a large mixing bowl and set aside.
  3. Place the milk in a small saucepan. Add the flour and nutmeg and combine with a whisk. Bring to a boil and then simmer until thickened; about 5 minutes.
  4. Remove from heat. Stir in 1/2 cup cheddar cheese until melted. Add the garlic powder, onion powder, and mustard powder and stir to combine.
  5. Pour the milk mixture over the turkey mixture and stir well to combine. Fold in the crumbled bacon and pour the mixture into a casserole dish coated with cooking spray.
  6. Bake at 400, covered, for 15 minutes or until bubbly. Remove cover, top with remaining cheese and bake an additional 5 to 7 minutes or until the cheese is melted.
