So, this is round 3 for me with the #FreakyFriday group.  “What’s #FreakyFriday” you ask?  Well, it’s hosted by Michaela from An Affair of the Heart.  There are 16 bloggers participating in the event this month.  It’s kind of like SRC, if you’re not new to my blog.  If you are, well, here’s the 411.

 

 

Each blogger who signs up is assigned a blog from another participant.  Like me, for instance.  I was assigned Cooking On a Budget.  Once you receive your assigned blog, you get to go through their recipes and pick something you want to cook.  Since I’ve actually  been planning to make something VERY similar I decided to make these delicious Sausage Fajitas.  Then, once you cook up their recipe, you post about on the #FreakyFriday; telling everyone about their wonderful blog, what you found out, and how delicious their recipe was!

And just look at how colorful and flavorful these sausage fajitas are!!  Seriously.  Take your favorite Italian sausage recipe and slap it on a fajita making deilcious and easy Italian sausage fajitas.  I mean, honestly, who doesn’t love to just put everything in a flour tortilla?  I would totally do that if I could get away with it.  Eggs, burgers, chicken; you name it!!  I just love flour tortillas.

This Italian sausage fajitas recipe was a no brainer for me. 

 

I truly was planning something similar in my head with all those sausages we have in the freezer.  How can I possible pass up a package of turkey Italian sausages for under $3?  Several times a month, my local Walmart has those babies marked down to a point where I just can’t resist.  THREE DOLLARS!  The protein is usually the most expensive part of the meal.  THREE DOLLARS!  Add half a box of pasta and a jar of sauce and you’ve got a meal for 4 for under $6.  You really can’t get more budget savvy than that.

 

A lot of Patty’s recipes are about being frugal and stretching your grocery budget as far as you can.  I’m all for being frugal in the kitchen.  The hubs probably looks at me all crazy like when I stick a couple of slices of leftover meat in a baggie in the fridge.  You never know!  It would be part of a hash for breakfast.  Or toss with some veggies for cheesesteak style sub.  A little can truly go a long way!!

Now, Patty suggests slightly freezing the sausages before slicing them. This totally works!  I know because I’ve done it before.  I’m of the more lazy approach and use my kitchen shears to slice them into bite sized pieces.  The trick is to turn the sausage 1/4 turn before making the next cut; so you’re constantly rotating it in your hand as you slice it.  It makes for more even pieces of meat.  Either tip works perfectly well, so chose on you’re most comfortable with.

I don’t know how I got onto the red onion kick.  We always have one in the fridge for sandwiches or toppings for chili and dishes just like this one!!  Yes.  I know there’s onions already tender and delicious in this dish, but I like that sharp little kick in the tongue that raw onion offers up to the Italian fajita party.  I think you’re going to like it, too.

The sky is the limit with toppings for these Italian sausage fajitas!

 

Now, with these fajitas, you could go traditional with your toppings and put cheese (duh!), tomatoes, and onions on top.  Then you could totally mash it up and put salsa on top or even guacamole on top.  OR you could change it up and make a tapenade or a bruschetta topping to put on top.  You could top it with some pasta sauce or pizza sauce, too.  The sky is the limit!!

 

Oh yeah, baby.  You can just imagine how sweet the peppers and onions are.  And those flecks right there?  Delicious herbs and spices and fresh oregano and garlic.  Just a flavor-plosion in your mouth.

Italian Sausage Fajitas
Yield: 4 servings

Italian Sausage Fajitas

Cook Time: 20 minutes
Total Time: 20 minutes

With all the flavor of an Italian sausage sub, these Italian Sausage Fajitas are super quick, delicious, and perfectly kid friendly!

Ingredients

  • 20 ounces Italian sausage links
  • 1 tablespoon olive oil
  • 3 cups sliced bell peppers
  • 1 1/2 cups sliced onion
  • 1 teaspoon minced garlic
  • 1 teaspoon garlic salt
  • 1 teaspoon dried oregano
  • pinch crushed red pepper
  • 8 fajita tortillas
  • 2 cups shredded Cheddar cheese
  • Toppings: lettuce, tomatoes, red onion, chopped basil

Instructions

  1. Preheat oven to 350.
  2. Using your kitchen sheers, slice the sausages into bite sized pieces.
  3. Heat a nonstick skillet over medium-high heat. Add the olive oil and swirl the pan until coated.
  4. Brown the sausages..
  5. Add the peppers, onions, minced garlic, and spices. Continue cooking until the sausages are cooked through and the peppers and onions are crisp tender.
  6. Place the tortillas on baking sheets and top with even amounts of the sausage and veggie mixture. Sprinkle the cheese evenly on top and bake at 350 for 3 to 5 minutes or until the cheese is melted.

  1. Christie, I am so sorry about the confusion yesterday morning. I had done this recipe well over a year ago and you added “Italian” to the title so I had no idea it was mine. You did a fabulous job and thanks so much for all the kindness.
