Before you start assembling your pizza, make sure to preheat your oven to the recommended temperature. While the oven is preheating shape the dough, making sure to roll or stretch it evenly. Remember a thinner dough makes for a crispier crust.

 

Make sure to use quality fresh ingredients. Select high quality roasted red peppers, fresh cherry tomatoes, baby spinach, and buy a block of fresh feta that you crumble yourself. And even though the ingredients are fresh and delicious you don’t want to overload the crust. Less is best! So, be mindful about layering the ingredients on your pizza. Too many toppings can lead to a soggy crust and make it difficult for the pizza to cook evenly.

How do you make Mediterranean Breakfast Pizza?

 

First, preheat the oven! Then stretch out your dough and brush it with some extra virgin olive oil. I have some infused olive oils which I love to use for pizza and added flavor. I brushed mine with rosemary olive oil. Next comes a light layer of melty cheese. I opted for an Italian blend with mozzarella, provolone, Parmesan, Asiago, Romano, and fontina cheeses.

Next is the roasted red peppers. I drained mine and set them on a paper towel to remove excess moisture which can make the crust soggy. Next, I thinly sliced my tomatoes and red onion and used them sparingly to prevent them from overpowering the rest of the ingredients. I lightly sprinkled the pizza with some baby spinach and topped everything with the chopped Eggland’s Best Ham & Cheese Omelet.

 

Finally, a light dusting of the Italian cheese tops everything and then it goes into the oven. I baked mine at 450 for about 15 to 20 minutes until the crust is golden brown and the cheese is bubbly. When the pizza comes out, let it cool for about 5 to 10 minutes. Garnish your breakfast pizza with the crumbled feta and micro arugula greens before slicing and serving.

Ingredients

  • 16 ounces pizza dough
  • 2 tablespoons extra virgin olive oil
  • 1 cup Italian blend shredded cheese
  • 2/3 cup roasted red peppers drained and patted dry
  • 1/4 cup thinly sliced red onion
  • 1/3 cup sliced cherry tomatoes
  • 2 chopped Eggland’s Best Ham & Cheese Omelets
  • 3 ounces crumbled feta cheese
  • 1/4 cup micro arugula greens

Instructions

    1. Preheat oven to 450.
    2. Divide the dough in half and shape into 10 inch rounds.
      Brush the dough with olive oil using a pastry brush. Top with a light layer of Italian cheese. Spread half of the roasted red peppers on each dough. Sprinkle lightly with the onion and top with another light layer of Italian cheese.
    3. Place half the sliced cherry tomatoes on top of the cheese. Sprinkle one of the chopped omelets on top of the tomatoes and then finally another light layer of Italian cheese.
    4. Bake at 450 for 13 to 15 minutes or until the crust is golden brown and the cheese is bubbly.
    5. Remove the pizza from the oven and cool 5 minutes before garnishing with the feta and micro arugula before slicing and serving.
