Ingredients
- 16 ounces pizza dough
- 2 tablespoons extra virgin olive oil
- 1 cup Italian blend shredded cheese
- 2/3 cup roasted red peppers drained and patted dry
- 1/4 cup thinly sliced red onion
- 1/3 cup sliced cherry tomatoes
- 2 chopped Eggland’s Best Ham & Cheese Omelets
- 3 ounces crumbled feta cheese
- 1/4 cup micro arugula greens
Instructions
- Preheat oven to 450.
- Divide the dough in half and shape into 10 inch rounds.
Brush the dough with olive oil using a pastry brush. Top with a light layer of Italian cheese. Spread half of the roasted red peppers on each dough. Sprinkle lightly with the onion and top with another light layer of Italian cheese. - Place half the sliced cherry tomatoes on top of the cheese. Sprinkle one of the chopped omelets on top of the tomatoes and then finally another light layer of Italian cheese.
- Bake at 450 for 13 to 15 minutes or until the crust is golden brown and the cheese is bubbly.
- Remove the pizza from the oven and cool 5 minutes before garnishing with the feta and micro arugula before slicing and serving.
