In reply to Julie. You can substitute it with regular sugar, but it won't be as sweet. I think it's 1 cup fruit sugar to 1 1/3 cups granulated sugar, but you might want to increase the butter a little to compensate for the additional sugar.

These cookies looks so good!
Just one thing I don’t understand, why are they called «Norwegian»? Pecans have not been used a lot here in Norway, until maybe the last 15 years or so. Even now they are not very common. The nuts most commonly used for baking is hazelnuts, walnuts and almonds.
Anyway, just wondering, maybe there’s a story behind the name?

In reply to Erica. Yes and maybe? It might spread uneven if it's baked straight from the freezer. Maybe freeze them in balls and let them thaw for 30 minutes before baking? I haven't tried that though.
