Again, Erika over at Not Ketchup was a fabulous sponsor to the most recent event I participated in; #TripleSBites.ย I used a little of her sauce for my Lime Shrimp with Chipotle Cherry Cocktail Sauce.ย Ya know?ย The sauce the hubs almost lick straight out of the bowl it was that good?ย And it was that good due, in part โ okay for the MOST PART โ due to this delicious Not Ketchup Cherry Chipotle sauce.
Because of this, I had most of a bottle left over.ย And, well, me and any kind of tomato-type ketchup-y sauce just screams make barbecue sauce for some slow cooked goodness.ย And, I have to confess that the first Not Ketchup I received for #10DaysofTailgate made me wanting the Cherry Chipotle, too!ย But, alas, theyโre not sold here and the hubs would KILL ME if I brought in anything else to fill the pantry.ย Sorry, Erika!ย Maybe after I cook some of the pantry away can I order some sauce from ya!
Yes, I have been doing the step by step collage lately. Thank you for noticing! Theyโre pretty handy to have step by step pictures and with the new kitchen, I can easy take better photographs of each step. Before there really wasnโt great light and they didnโt come out well at all. But with the new kitchen thereโs TONS of light so I can bang out some step by steps for my readers now.
Besides, I wanted to make you drool over this deliciousness which will, hopefully, make you cook up a batch of this scrumptiously delicious chicken. I truly couldnโt get enough of its sweet, smoky, and spicy flavor. I still have some in the fridge that I may turn into some sort of nacho. Maybe with a little coleslaw on top, some cheddar and maybe a handful of beans, some onions. Just thinking out loud there. Just writing fragment sentences there.
Youโre going to need lots of napkins for this one. Trust me when I say this. I had sauce EVERYWHERE.

Better yet, grab a towel and throw together a make shift bib. Because you will want to devour this juicy, saucy, delicious goodness. Just look at it! The chicken got all tender and infected with that amazing cherry chipotle sauce. I say infected because itโs now a disease. Iโm infected with the flavor of this barbecue and I donโt want to be healed! I canโt say enough about how fabulously amazing this sandwich is.
A word about the sauce. Itโs thick. REALLY thick. I had to spread it around to cover the chicken. But, because itโs so thick, it almost caramelizes on the chicken causing little pockets of rich flavor throughout the sandwich. I should have taken a photograph of the chicken when it came out of the slow cooker, but it smelled amazing and I had to beat the hubs off with my forks to keep him from eating it all. It looked like it had been smoked and not cooked in a slow cooker.
Yeah, thatโs a pretty sad looking bun. My lunchbox container flattened it a little. The light at work is perfect for photographing. Consequently, I have a mini-studio in the office next door to mine which is empty for now. I hope it stays that way!

Cherry Chipotle Chicken Barbecue Sandwiches
Not Ketchup Cherry Chipotle Sauce is base for this deliciously sweet and spicy barbecue sauce. Cherry Chipotle Chicken Barbecue Sandwiches are messy good, so grab some napkins or a towel.
Ingredients
- 1 cup Not Ketchup Cherry Chipotle Sauce
- 1 cup ketchup
- 2 tablespoons onion powder
- 2 tablespoons chili powder
- 1 tablespoons brown sugar
- 1 tablespoon paprika
- 1 tablespoon Worcestershire sauce
- 2 teaspoon chipotle in adobo, chopped
- 2 teaspoon ground cumin
- 2 teaspoons ground mustard
- 1/2 teaspoon liquid smoke
- 2 cups thinly sliced onions
- 2 pounds chicken breasts, trimmed
- 16 hamburger buns
- Easy Fries
Instructions
- Combine the first 11 ingredients (Not Ketchup through ground mustard) in a small mixing bowl.
- Place the onions in the liner of a slow cooker coated with cooking spray. Place the chicken on top.
- Pour the sauce over the chicken and cook in low 8 to 10 hours or until the chicken shreds easily with two forks.
- Remove the chicken from the slow cooker and allow to cool enough to handle. Shred with two forks and return to the slow cooker.
- While the chicken simmers, cook the Easy Fries.
- Place the onions in the liner of a slow cooker coated with cooking spray. Place the chicken on top.
- Arrange two buns on each of 8 plates and top each bun with 1/4 cup of the chicken mixture. Serve with fries and coleslaw.
