Oozing Mummy Baked Brie
Oozing Mummy Baked Brie is topped with dried cranberries simmered in orange juice and dark chocolate chips. It’s a sweet and savory treat for an appetizer or dessert and super simple to make.
Okay. So, it’s not as oozing as I thought it would be. I think it rested too long because I had so much going on this weekend. Because, well, I’m a slacker and had no recipes started. Monday’s recipe was something I tried a few times and just didn’t photograph. This recipe is sort of the in the same boat in some way, shape, or form.
What is baked brie?
If you don’t know what baked brie is, I’m so sorry. Everyone should experience this at least once in their life. Especially if they like puff pastry and brie. Because basically baked brie is brie wrapped in puff pastry and baked. The buttery laminated dough pairs so well with the creamy, buttery brie. I don’t even mind the rind in this recipe.
I’m not entirely sure of the history of baked brie or brie en croute. Puff pastry was invented in the 1600s in Franch. Brie was invented in the 7th century in France. Like most cheeses, monks invented brie. A painter and apprentice cook invented puff pastry. How the two combined to make brie en croute or baked brie is something I cannot seem to find. It will forever be a history to me.
What does brie taste like?
It depends on the brie. It’s not like a Cheddar cheese with basically mild, medium, sharp, and extra sharp. Brie can be semi-soft and even runny depending on how long it cures, the type of rennet, and temperature of the air.
For me, brie is butter and salty. Sometimes the rind, which is a white mold from my understanding, can be mild and delicious or sharp and disgusting. I typically cut the rind off, but sometimes it’s very mild I can tolerate it.
Brie is very rich and decadent. And also, very addictive. I know I can’t buy a large wheel of brie. At the most, it’s the small round of Presidente brie from the grocery. Anything more than that and I will have cheese sweats. Instead of meat sweats. Please tell me you know what those are. If not, Google them.
What does puff pastry taste like?
Also buttery and also slightly salty. It’s also very crispy and rich. Puff pastry is layers of thin dough and butter. It can puff up very tall. Hence the name puff pastry. But it can also be dense and flat depending on how you cook it.
In the case of my grilled peach Napoleons, I cooked the puff pastry between 2 sheet pans preventing it from puffing up. But making it this layer buttery pastry to break apart and fill with delicious whipping cream and peaches.
Puff pastry also makes a delicious crust for a tart. I know because I make one with ricotta cheese and tomatoes. It was a but of pain getting it into the springform pan. But that’s because I was naïve and rolled it too thin. Don’t do this. Oh, and if you’re looking for a larger sheet, simply stack the two pieces on top of each other and roll them out together. It will roll larger and, well, it’s a layered dough so they’re meant to stack like that.
What do you top oozing mummy baked brie with?
So, I was cleaning out the pantry the other day and noticed that I had a couple of opened bags of dried cranberries. And, well, if you’ve ever had those in the pantry for too long they just turn into little bbs. Yes. I mean those little round things that go into a bb gun or a pellet gun. Dried cranberries just don’t stay moist forever.
I thought, “I should simmer those with juice and make something with them.” The something was the thing I wasn’t sure what at the time. Then I remembered I needed to make something for Halloween Treats Week. Perfect! I could simmer the cranberries with some orange or grapefruit juice and sugar. Then I could add some chocolate and put it all on braked brie! Oozing mummy baked brie! Yum!
The chocolate was actually an afterthought. I thought it would make the brie more oozing. But remember what I said at the beginning? It cooled too long in the oven among all the other things I made that day. Like Monday’s recipe and Friday’s recipe.
How do you make the mummy strips?
I had an extra sheet of puff pastry. Believe me when I say that once you open the package you should plan on using both sheets soon. It will not last in the fridge. Thankfully, I have several recipes to give you inspiration for using that other sheet.
Anyway, I used part of the second sheet to cut strips for the mummy part of the oozing mummy baked brie. I brushed the wrapped brie with egg wash for color and to let the strips stick to the wrapped brie making the mummy look. Of course, as you can see, the mummy strips will come off. And that’s fine. They make for delicious puff pastry straws to pick at while eating the appetizer.
What does Oozing Mummy Bake Brie taste like?
Buttery. Creamy. Slightly tangy and oh so sweet. The puff pastry is crunchy and buttery. The brie cheese is also buttery and salty. Then there’s the tangy and sweet cranberries. Finally, the dark chocolate rounds out all the flavors with it’s earthy sweetness. It’s a delicious recipe for an appetizer, snack, or even a dessert!
Oozing Mummy Baked Brie
Oozing Mummy Baked Brie is topped with dried cranberries simmered in orange juice and dark chocolate chips. It’s a sweet and savory treat for an appetizer or dessert and super simple to make.
Ingredients
- 1 cup dried cranberries
- 1 cup orange or grapefruit juice
- 1/2 cup sugar
- 1/4 cup chocolate chips
- 8 ounce brie wheel
- 1 sheet puff pastry
- 1 large egg, lightly beaten
Instructions
- Put the cranberries, juice, and sugar in a small saucepan.
- Bring to a boil and then simmer until the juice is reduced by 2/3 and thickened; about 30 minutes.
- Remove from heat and cool to room temperature.
- Preheat oven to 400.
- It’s not necessary to cut the rind off the brie. However, I would cut the top off to allow the flavors of the cranberries and chocolate to mingle with the brie.
- Roll the puff pastry out to a 12 by 12 square.
- Cut the corners off the puff pastry making it more round.
- Place 1/4 cup of dark chocolate chips in the middle of the puff pastry.
- Top with 1/4 cup of the cranberry mixture.
- Place the brie, upside down, on top of the cranberry mixture.
- Carefully pull the edges up around the brie and pinch the edges to seal.
- Using a sharp knife, cut 8 to 10 1/4 inch strips from the remaining puff pastry sheet.
- Brush the wrapped brie with the egg.
- Carefully place the strips of puff pastry over the wrapped brie to mimic a mummy wrapping.
- Brush the strips with the egg wash and bake at 400 for 30 to 35 minutes or until the puff pastry is golden brown.
- Cool slightly before slicing and serving with crackers.
