Low Fat Chocolate Cheesecake

January 16, 2013

I...have a confession to make.  *wrings hands*  I'm not quite sure how to tell y'all this but.  *sigh* I AM AN ANIMAL MURDERER! There!  I said it!  It's out in the open.  I have killed dozens of animals!  No, I don't know how I sleep at night or how I can live with myself.  I killed dozens of animals just making this cheesecake alone! *giggles*  Animal CRACKERS that is.  I couldn't honestly hurt a fly...spider maybe, but fly probably … [Read more...]

K’s Fruit and Fiber Bars

September 14, 2011

This is a recipe from CTM's step-mom. K's Fruit and Fiber Bars are lowfat and full of fiber. They're VERY sweet, but I'm sure you can cut back on that a bit...       These are addictive. They're healthy. They're lowfat. What's not to like? I've used dried cranberries, cherries, blueberries, apricots, figs, raising, currants, golden raisins. The sky is the limit in the type of fruit you can use.   I usually cut them into large bars (about 16 for the pan) or you can cut them into smaller bars for … [Read more...]

Banana Pudding

August 26, 2008

Banana Pudding Cooking Light, May 1997 I have made this SEVERAL times and thought I'd post it on here. IT IS AMAZING! We LOVE this recipe and have made it twice in the past week and probably would make it ONCE a week we could stand the calories. The pudding is just tasty!! Sometimes, I dip cookies in it while I'm arranging the layers, it's that good. I add just a few drops of banana extract to the pudding mix with the vanilla extract to give it just a hint of banana flavor. The meringue layer … [Read more...]

Spaghetti and Meatballs

November 13, 2007

Spaghetti and Meatballs Cooking Light, OCTOBER 2003 So, I cheated and bought jar sauce. I think we used Classico Sweet Basil or something like that. I didn't bake the meatballs, but sautéed them in a pan, but I did put them in the sauce to continue cooking while the water for the spaghetti boiled. *snort* I'm such a recipe massochist!! The meatballs were DELICIOUS, though. They were probably the best meatballs I've ever made aside from my chicken ones, which I should post some time. I also … [Read more...]
