Rice Pilaf with Shallots and Parmesan

I doubled this recipe so we would have some for left overs the next day. It’s a pilaf. It’s easy to make. I added some orzo to make it more like rice a roni type pilaf. I always add that when I’m making a pilaf. We didn’t use parmesan but asiago instead. I didn’t feel like opening up the new package of parm when the asiago was already opened. The cheese just kind of melted on the rice. Maybe it would have been a little different with the parm, but it was still good.
