This Salt & Pepper Shrimp Scampi was almost a Salt & Pepper Shrimp Carbonara. I may do that later, but I realized that I have been making too much carbonara lately. As if such a thing could possibly exist, but knowing S the way I do, I’m sure some of the repeat themes are boring him. I’ve discussed how he doesn’t like to eat the same thing in the same week. Sometimes I wonder how he puts up with my cooking because I do tend to get hooked onto something and won’t let it go until it’s out of my system. Like the most recent venture that I’m just going to have to let go for a few months anyway. It’s just not working the way I want it.

Yes. I know I’m being vague, but it’s a post that’s in the works so I’m not going to hint on it. You’ll just have to wait for it when and if it does surface. If I can get the flavors the way I want them, it will be DA BOMB! Just sayin…

Like this meal. I thought it was the da bomb! It was tasty and incorporated a favorite Asian dish, Salt and Pepper Shrimp, into an Italian meal…SCAMPI! Cause who doesn’t love scampi?? You, again? You’re the one that doesn’t like cheese, right? I’ll wait for you to leave…quietly. *snort* KIDDING!

If you haven’t noticed in my pictures, I’ve been on a lettuce wedge kick. They’re easy and a good way to get some veggies into our diet. Which are lacking sometimes. I just forget. I don’t plan a whole meal, but more the main course and then just forget sides. I’ve never really been a large sides person. I mean, I have large sides, but…well…ya know what I mean. With the exception of buttered noodles which I could probably eat my weight in, sides elude me. Maybe I should start a series on quick and delish sides. Now there’s a thought. Hmm.

Lettuce wedges are also a decent way to take up space in your stomach when you’re trying to lose weight. Like me. I had hopes of being able to start hiking again, but our backs went out last weekend. OH YEAH! I forgot to tell you that we never made it to Rickett’s Glen. S was putting our sleeping pads in a bag and POP went his back! THAT MORNING!! *sigh* So it was ice and me taking care of both him AND the dog the whole weekend and week with the exception of Wednesday after work. S walked her then, but it’s been me almost 24/7 for the last week. Honestly, there’s no fur-baby mom’s day, is there? *shrugs*

YUM! Just look at those succulent shrimp! The black pepper adds delicious heat to this traditional dish. It’s a welcomed addition to this Salt & Pepper Shrimp Scampi. This is such a quick and easy week night meal. No matter what the state of your back or if you have to walk the dog by yourself all week, you should treat yourself to this meal. It’s yummy!

Salt and Pepper Shrimp Scampi
Yield: 4 servings

Salt and Pepper Shrimp Scampi

Cook Time: 25 minutes
Total Time: 25 minutes

Ingredients

  • 1 pound large shrimp, peeled and cleaned
  • 8 ounces angel hair pasta
  • 4 tablespoons butter
  • 3 cloves minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook pasta according to package directions omitting salt and fat. Set aside.
  2. Heat a large skillet coated with cooking spray over medium-high heat. Add the garlic and sauté 1 minute. Add the shrimp to the pan and sprinkle with the salt and pepper. Cook the shrimp until firm and no longer opaque in the center.
  3. Toss the pasta with the shrimp mixture. Serve with salad and crusty bread.

  2. We love shrimp and eat it often. I like how this dish has simple ingredients and easily comes together for a delicious meal. I could dig in my pantry, fridge, and freezer and have everything needed!
