November 3 is National Sandwich Day. I figured since there’s a slew of sandwiches for lunch and dinner that I’d highlight sandwiches for breakfast. Breakfast sandwiches are so easy and fun to make. Plus, there’s a myriad of toppings for your sandwiches. Heck, you could totally have a breakfast sandwich bar for your family during the holidays. Sort of like my breakfast pizza bar idea.

What is a sandwich?

Since I’ve already talked about sliders in this post, I thought I’d talk about sandwiches in general. And yes, there are specifics as to what makes up a sandwich. United States Department of Agriculture states that a closed sandwich “must contain at least 35 percent cooked meat and no more than 50 percent bread.”

They go on to explain that a typical sandwich may be two slices of bread OR a top and bottom bun that “enclose meat or poultry.” Why is poultry not also meat? This confuses me. Finally, an open sandwich must contain 50 % cooked meat.

Then there’s the Massachusetts court case where Panera tried to keep Qdoba from renting space in a mall citing Panera’s exclusivity clause for other sandwich restaurants. Jeff Ackerman, the owner of Qdoda said, “it’s common sense that a burrito is not a sandwich” and the USDA agrees.

They state that a burrito is a “Mexican style sandwich-like product consisting of a flour tortilla, various fillings, and at least 15 percent meat or 10 percent cooked poultry meat. The flour tortilla is rolled and may or may not have tucked ends.” Fajitas are also in this sandwich-like product category and require at least 15% meat.

The rest of this labeling policy is quite an interesting read. It outlines what manufacturers and establishments can call their food. I wonder if I’m in violation of any of these.

New York, on the other hand, has a differing opinion. Of course, this is for tax purposes so that caveat must be made. They claim that anything “prepared and ready to be eaten” is a sandwich. This could be between slices of bread or a bun, bagel, roll, wrap, pita, etc. They claim that a sandwich could be as simple as a buttered bagel. I’m sorry what? A butter bagel is a sandwich? That’s like saying buttered toast is a sandwich. But they probably claim that is.

When did people start eating breakfast sandwiches?

People ate eggs, meat, and bread for breakfast for a long time. But it wasn’t until the 1800’s that people started putting them all together between the bread. The breakfast sandwich was very popular after the Civil War.

It was also a popular breakfast for those pioneers heading west. I mean, who could resist a portable breakfast with delicious eggs and bacon or ham on it while they’re hitting the trail discovering new lands? An interesting note to this bit of history is that these breakfast sandwiches weren’t eaten for breakfast.

The first recipe for a breakfast sandwich appears in a cooking in 1897. And it’s nothing like we think it is. Basically, you take stale bread and put some chopped meat on it. Then put another piece of bread on top. That’s not all. Then you take a pint of milk with some salt and an egg in there and pour it over the sandwich. Finally, you cook these sandwiches in some butter in a pan. Sort of like a Monte Cristo without the cheese.

It wasn’t until 1972 when McDonalds rolls out the Egg McMuffin does the breakfast sandwich become popular to eat FOR breakfast. The popularity of this sandwich spread like wild fire and you could the muffin version or biscuit version almost everywhere. Heck, in China the Egg McMuffin is served all day. Because the Chinese don’t see the egg as just a breakfast food. I’m sort of with them on this sentiment. I love eggs any time of day.

What’s in these Simple Breakfast Sliders?

I made mine super simple. There’s eggs, cheese, and bacon. See? Simple. You can easily cook the bacon ahead of time. I wouldn’t recommend cooking the eggs ahead of time. I don’t like it when they get too dry. But you do you! If you want to make them ahead of time, then have at it!

You could even bake them in a baking dish in the oven. I did that with my breakfast totcho kabobs. Then it’s just a matter of trimming to size and laying the sheet of eggs on top of the bread to make these Simple Breakfast Sliders. Actually, that sounds like a really good idea. I might have to try that next time I make breakfast sliders. I mean, I have the oven on already so it’s not like it would add to the time it takes to make these.

I used a Coly Jack combination of cheeses. For some reason, I purchased a rather LARGE bag of shredded cheese. Something about the unit price being super low. I mean, lower than the brick of cheese which usually is unheard of. But it is a LARGE bag of cheese. Thankfully, I have another recipe later in the week that I can use quite a bit of it.

I put a dash of cayenne in the butter mixture just to kick it up a bit. It’s not a ton. But it’s enough to have a bit of kick to the bread. Omit it if you don’t like it. Add more herbs and spices if you want. For me, I stuck with the basics. Because, well, unless I’m making a fancy schmancy breakfast I just keep it plain. No thyme or rosemary in there. Again, you do you! You want to put more flavor in there, then have at it! I always tell you to cater these recipes to your flavor preferences.

These are light and delicious. They’re not enormously filling like some sandwiches can be. The butter topping adds a nice flavor. It also makes the buns crispy and delicious on the outside. And the inside is tender and cheesy with a hint of smoke from the bacon.

Feel free to add in some veg if you want. We would probably add some mushrooms and maybe some peppers if the hubs was home. Or a touch of jalapeno for more kick. But again, I called these simple breakfast sliders for a reason. They’re simple. They’re also quick and taste delicious. The perfect bite or 3 for breakfast.

Ingredients

  • 12 buttery dinner rolls
  • 4 large eggs lightly beaten
  • 4 tablespoons melted butter, divided
  • 1/2 cup chopped bacon (about 6 to 7 slices cooked)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Dash cayenne pepper (optional)

Instructions

    • Preheat oven to 350 F.
    • Heat a nonstick skillet over medium-high heat.
    • Add one tablespoon of the melted butter and swirl to coat the pan.
    • Pour in the eggs and stir with a rubber spatula.
    • Continue to stir the eggs with the spatula as they cook; folding them as you stir. This keeps the eggs fluffy.
    • Remove the eggs from the pan just before they’re fully cooked. You don’t want to overcook them as they will cook in the oven, too.
    • Slice the dinner rolls in half horizontally.
    • Place the bottom in a 9 x 13 baking dish. Since I only made 6, I put mine in an 8 x 8 baking dish.
    • Sprinkle 1/2 cup of cheese on top of the bread.
    • Place the eggs on top of the cheese.
    • Sprinkle the eggs with the bacon before adding the remaining cheese.
    • Place the top on the sliders.
    • Combine the remaining melted butter with the garlic powder, onion powder, and the cayenne peppers if using.
    • Stir with a pastry brush and brush the tops of the rolls.
    • Cover with foil and bake at 350 for 30 minutes or until the cheese is melted.
    • Remove the foil and brush the tops again with the butter mixture.
    • Bake an additional 10 to 15 minutes or until the tops are golden brown and crispy.
    • Cool slightly before slicing and serving.
