Smoked Trout Wonton Crisps

The holidays will be here before you know it. And before you know it, if you’re like me, you’ve gained a few pounds. I am trying to prevent that from happening by making some deliciously healthy, low calorie recipes for the holidays. Starting with these smoked trout wonton crisps.
I don’t know about you, but usually I can find the wonton wrappers in the produce section of my grocery. It’s near the vegan food and sometimes near the Asian vegetables. However, today it took me forever to find them.
I looked for them in obvious places like near the tofu and tempeh. Nope. I perused the produce and the deli section. Couldn’t find them there. I was just about to give up hope when I happened to look to my left in the frozen foods section and found them. At the end of the entrees and with the frozen dumplings and noodles. Who knew?
How do you make wonton crisps?
I baked mine in the oven. They take just a few minutes per side. Make sure to brush them off if they have any excess flour. That’s a buzz kill for the chips. I sprayed a foil lined baking sheet and spread out a single layer of wonton wrappers. Then I sprayed them with cooking spray and then baked them for 4 minutes.
You want to flip them over and then spray them again. Then bake an additional 3 to 4 minutes or until golden brown. Mine are a little browner than most photos. But they don’t taste burned. So no worries there. I do tend to like my fries, chips, and what not a little crispier than most. So, try a couple of different color ranges and find out what you like.
You can also make them in the air fryer. It’s pretty much the same method, time, and temperature. But I wanted to bake many at once. That’s why I went the oven route. Besides, it doesn’t take too long for them to cook, and you can whip these up ahead of time. Just store them in an airtight container for up to a week.
What other types of smoked fish can I use?
Salmon, of course. But we all know that I don’t like salmon. I’ve tried. Every which way there is. Trust me. It’s not the way it’s prepared. For me, it’s the flavor of the fish. It tastes like metal to me and that’s just never appetizing.
There’s smoked haddock. Which I’ve never actually seen. I was actually concerned I wouldn’t find smoked trout and would have to get salmon. Thankfully, the store we went to had some trout. I was thrilled! And it was enjoyable, but a little on the salty side. So buyer beware with that. You might want to taste the fish before you add the celery salt to the cream cheese.
Of course, there’s smoked mackerel. I feel like that fish has everything done to it. I’ve never had it and from what I can tell it’s not something I would like. It has a full-on fish flavor which is a huge turn off for me. If you’re up for it, try adding a little horseradish to the cream cheese to cut the rich flavor of the fish.
There’s a slew of shellfish you can use if you’d like. I’ve tried smoked oysters. Not my cup of tea. Then again, it was a tin from the regular grocery store. I know there’s smoked mussels and all kinds of sardines and anchovies. Yes, I know those aren’t shellfish. Just suggesting other seafood that you might like to try.
What makes these smoked trout wonton crisps healthy?
Well, they’re low in calories. Regular cream cheese has 100 calories per ounce, 90 of which are from fat. The reduced fat cream cheese has 70 calories per ounce, 60 of which are from fat. I spread about a tablespoon of cream cheese mixture onto each of the crisps. That’s about half an ounce per tablespoon or half the calories listed above.
I baked the wonton crisps. You could pan fry them in oil, but I chose to bake them. I sprayed them with cooking spray before I cooked them but not enough to really register in the calorie count. I can’t really pinpoint how many calories are saved by baking them, but I’m sure it’s a decent amount.
I added tons of flavor in the cream cheese mixture. There’s garlic, chives, dill, onion, and celery flavors in there. With all that flavor, you’re not going to miss all the calories of the full fat cream cheese and frying the wonton crisps.
Then there’s the smoked fish. It also packs tons of flavor without being sauteed fish or fried fish. Or even a baked fish. Smoking adds another layer of flavor and texture you wouldn’t get with a regular cooked fish.
Just look at that crisp! It’s perfectly browned and crispy. Then there’s the creamy cheese mixture packed with chives, garlic, and dill flavor. Finally, the smoked trout on top. It’s a 2 to 3 bite appetizer that’s satisfying and simple to make. You’re guests will devour the plate, so make sure to double up on it!
Smoked Trout Wonton Crisps

Ingredients
- 8 ounces room temperature reduced fat Neufchatel cheese
- 2 teaspoons chopped fresh chives
- 1/2 teaspoon dried dill
- 1/4 teaspoon onion powder
- 1/4 teaspoon celery salt
- 1/2 teaspoon pressed garlic
- 4 ounces flaked smoked trout
- 20 wonton wrappers
Instructions
- Preheat oven to 350 F.
- Combine the Neufchatel cheese with the next 5 ingredients (chives through pressed garlic) and stir well to combine.
- Place the wonton skins on a baking sheet and spray with cooking spray.
- Bake for 3 to 4 minutes.
- Turn the crisps over and spray with cooking spray.
- Cook an additional 3 to 4 minutes or until golden brown.
- Allow the crisps to cool to room temperature before spreading with the cream cheese mixture and topping with the smoked trout flakes.
