Spicy Chipotle Shrimp Salad recipe

This sounded really interesting, and being as it was hot as hell this week, I went with mostly salads. I am a firm believer of tasting the chipotles before you use them. I didn’t this time. It needed more chipotle. They apparently weren’t very spicy in this can.

Being as I wanted t make this a dinner salad, so I also added some avocado to the mix. Don’t. It turned out to be a shrimp guacamole. Yeah, sounds interesting, but it really wasn’t. It was even worse the next day for lunch.

I wanted more lime tang to the mixture so I will add more lime juice the next time I make this. I will NOT add avocado to the mixture but will just put it on the lettuce or on the side next time.

I will have to try this recipe again. Not sure I can judge how good it is with what I did to it.
